Flapjacks

Good morning,

After last nights GBBO I feel that need to master Flapjacks.
Does anyone have a foolproof recipe, please?
My flapjacks have always been a disaster, usually absolutely rock hard and only fit for the bin 😂

In hospital at present so I can’t access my recipes but it sounds as though you’re baking at too high a temperature or for too long. I like mine to be sticky so I keep a close eye on it and take it out of the oven when the tray full is golden at the edges.

To avoid the tarmac effect, keep an eagle eye on them in the oven and take them out when set at the edges but still wobbly in the middle. They go on setting after removal from the oven.
The recipe doesn’t matter, it’s the cooking time which is vital.

The softest ones I’ve tried are in a mini bites tub by Sainsburys.
When I next make them that is what I’m aiming for because my teeth won’t cope with the well cooked version.

Shame on me, I buy big boxes from Blackfriars. They are fairly squishy - lots of flavours, big and cheaper than shops. don't go there if watching the weight! (I can't digest white wheat flour, so this is my 'go to' sweet fix). Also - makes a great rich porridge which comes in handy if ill or too exhausted to do sensible food.

I would love to make successful flapjacks but mine always fall apart despite following several different recipes. Any tips please?

I have totally solved my inability to make flapjacks.
We now have wonderful, soft chewy ones , often with cherries or ginger.
They are divine!
My secret ???
I let my husband make them !
I have no idea what exactly he does that is different to me but they are a success every single time!
Who knew ???

Made these with my grandson from a children's cookery book and they were delicious.
Apple Flapjacks
2 eating apples (peeled/chopped)
175g butter
175g demerara sugar
2tbsp syrup
Half tsp cinnamon
50g sultanas
225g porridge oats
2 tbsp sunflower seeds.

Line tin 7" x 11"
Put apple in pan with 25g of the butter - 10 mins - low heat until softish
Stir in rest of butter, sugar and syrup, cinnamon, sultanas until all melted together
Remove from heat - add oats etc.
Cook for 25 mins 160 C - golden brown but still soft
10 mins to cool then mark into squares and leave to go cold in the tin.

I make a larger quantity in a larger tin. I think you could just add what you like really.

These were brilliant. Even better than my usual recipe (which is very good) from an old Waitrose newspaper - Martha Collinson (?) - you might be able to find it online.
I'd be interested to hear how you got on with making them.

I THINK this is the one I use and it works well. But try the apple flapjack recipe first! Don't overbake or they set too hard.

Sorry no,
but our nearby Garden Centre produces some Bobby-dazzlers of flapjacks and you get a generous chunk.
Nearer to Christmas they put Cranberries in them 😋.

Ooh, I have an urge for flapjacks now! (I knew I shouldn't have.opened this thread!....).

I was told by an assistant in a bakery shop they use a certain amount of flour in the mix . I can’t remember the exact quantity but I’m sure it’s on the interenet somewhere , Theirs were lovely .

I used to cook mine in the microwave and they were always soft. They only take 4-5 minutes but my difficulty was finding a square container suitable for the microwave.

My flapjacks work out, but all the recipes seem to need a lot of fat and a lot of sugar.
I'd love to make healthier ones!

A healthy(er) treat (for those who give a damn) would be these Fruity Oatcakes - more like a scone but not “claggy”

4 ounces of each
of 4 ingredients;
Porridge oats
Wholemealflour(could be self raising version it won’t hurt)
Date purée
Vegan spread.
….. Just mingle flour &oats in a bowl then put chopped up dates and buttery spread in small milk pan gently heat ‘til nice and squidgy while mashing with a wooden spoon or similar,
it won’t take long
Then add to the bowl and finish off with hands to make sure it’s all incorporated.
Then sprinkle of flour on surface, form or use cutter making them quite tall. Bake on gas 4 or 5 for 15/20 mins - this makes about 4 or 5 decent ones.
Sounds boring but very addictive!
Cut open and coat with more spread and eat and they go well with yoghurt in a dish and can be made with apricots as an alternative.
Best eaten within one day - no prob there😋
