What is the best chocolate to use to make brownies?

I can report that I used Bournville for my first attempt and we were happy with the result, chocolatey but not too strong. We also bought the Lidl chocolate so we can do a taste test another time.

Green & Black's? That brand has a choice of cocoa strengths right up to 85%.

I never use cooking chocolate in anything - I usually just go for a supermarket own brand, preferably dark chocolate - Aldi and Lidl are both quite good, I find.

Adding a tiny pinch of salt enhances the taste .
And so does Mace but not together!

There was a test of supermarket plain chocolate in this week's Feast supplement in the Guardian. Green and Black's Organic,was rated highly. Willy's was the best, more expensive but I can attest to its' quality.

I don't like Bournville. I find it very sweet and it only has 36% cocoa solids in it.

I made my first ever brownies on Sunday. They are not what I’d choose to eat but my granddaughter wanted to make them with me. I used Lidl dark and milk chocolate and they were absolutely amazing. A friend who does a lot of baking recommended Lidl cooking chocolate and it’s really very good. The dark one is 52% cocoa solids and the milk is 40%. They sell higher cocoa content at the sweets/chocs area, but as the result was extremely rich and chocolatey, I would use it again. It’s also not as expensive as regular eating chocolate and tastes like normal chocolate.

I make Nigella Lawson brownies very occasionally. They are packed with very best dark chocolate, eggs, butter, sugar, walnuts etc.
These are delicious.
A bank loan is necessary and it ruins the diet.

I never use cooking chocolate either- I just but the best quality chocolate I can afford.

You can tell I don't bake often- but when I do I like it to taste good!

When I used to make them I used cooking chocolate with no problems. Either Tesco or Lidls.

I don't use cooking chocolate either. The dark chocolate in Aldi is very good in my brownies.

If you like dark chocolate I think Bournville is the best for cooking. I have never had good results with cooking chocolate.
