Electric omelette maker

I've recently bought one of these and I'm delighted with it. Makes 2 light and fluffy omelettes with 3 large eggs, perfectly set. I used to pop mine under the grill to set the top but seems wasteful.
Anyone have suggestions for fillings? I've tried the usual ham and cheese, mushrooms and peppers but would like to be a bit more adventurous.

Smoked salmon
Asparagus (pre-cooked)
Beansprouts, sliced spring onions and cherry tomatoes
Streaky bacon

Cold potato cubes, spinach and cheese.
Fruit, serve with crème fraiche.
Sweet potato, peas and onion with curry spices.

I can’t understands why you would want to. It takes minutes to make a perfectly cooked, fluffy omelette with any filling you choose with just a small pan on a hob. You presumably have to find somewhere to store an electric one when it’s not in use?

With all due respect, the OP didn't ask for opinions about omelette makers - she's already bought one. She was simply looking for filling ideas.
