Following a previous post asking for suggestions with what to do with a HUGE amount of tomatoes, I am happy to report that having giving pound & pounds away I now have a freezer full of lovely tomato dishes- especially Roasted Tomato pasta sauce- which will also give a good base to casseroles.
However 90% of the tomatoes turned out to be a bright yellow plum type & the sauce looks very odd. Tastes divine but looks offputting- I did consider food colouring but it is all natural, organic ingredients so I will put up with it. The family are used to it now but I think I'll save it for them- pasta covered in custard as my grandson remarked!
