Rose hips

Anyone know if you can make rose hip syrup from ordinary garden type roses or does it have to be specific type? Also our hips aren't going red, is this because they're ornamental?

Roses are having an odd out-of-sync year because of the weather so maybe the colour is telling you they are not ripe yet. Garden rose hips can be used as well as hedgerow hips. It's just a seed pod after all. However, don't use them if the roses have been sprayed. Best to wait to harvest 'til after the first frost as that sweetens the flavour.

Rose hip syrup needs straining though a fine sieve because of irritant 'hairs' in the fruit.

Delibes, thanks for the info. I'm hoping to get a few hips eventually to make syrup. I knew the frost makes sprouts taste better, didn't know about hips though.
Nanarose- I have made the syrup before but was provided with the hips so aware of the hairs. A paper coffee filter works great for this.
