Acorn squash

I was given some acorn squash seeds and planted them as instructed! They are gradually taking over a raised bed at the bottom of our veggie plot. There is one very large one, the size of a melon and lots of small ones! The question is do I leave them all on the plant or remove some of them? How big will they get? When will they be ready!! Help please

I just 'googled' and found that you will know they are ripe when the skin hardens, the bottom that sits on the ground is orange and the stem starts to wither. Cut the stem and you can use or store the squash in a cool place.
