Low carb eating.

The doctor has suggested that I have slow release carbs to help with fatigue. One checking what they might be I see I am already eating some of the right foods.

I would appreciate your advice on low carb eating as obviously I am not eating enough of them, or too much of the high carbs.

Chaitriona The truth is I was eating too much. To cope with boredom, pain, anxiety -whatever. But it doesn’t work really. You are only distracted while the food is in your mouth. It can become habitual. Especially with sugar. Which is addictive.

This is very true for me, I am an emotional eater. The most effective way for me is low carb, higher fat, like the Blood Sugar Diet. But being vegetarian, it is hard to do long term, as the choices are more limited. I am just having anther try, as I feel so bloated and unhealthy.

Seacliff like you being a strict vegetarian (dairy but no eggs) find this diet hard to follow, yet I should for weight and blood sugar control.

From The Sugar Free Kitchen: Sweet Potato Brownies
150 mls/5fl oz olive oil
175g/6oz sweet potato coarsely grated
100g/3 1/2oz stevia or sugar substitute
50g/1 3/4oz cocoa/cacao powder
1/2 tspn bicarbonate of soda
50g/1 3/4oz ground almonds
2 eggs beaten
20g/3/4oz walnuts roughly chopped.

I’ve also used ground mixed nuts and other chopped nuts. Just depends what is in the cupboard.

Pre-heat oven 180C/gas 4. Oil shallow tin and line with baking paper.
Put all ingredients in bowl and stir well. Bake for 20 mins or well risen and centre just set.
Cool in tin for 15 mins. Cut into 12 or more if preferred

Note there are ways to make this vegan by using egg substitute such as banana or chia seeds but you would need to check out how to do this

A very easy sweet, no sugar, vegetarian treat is Simply Delish Jelly.
I get mine from Amazon but I think Sainsbury stock it too

As the OP has asked for advice for "slow-release carbs" this is very different to a low carb diet.

Slow release carbs are things like brown rice, porridge, sweet potatoes, firm pasta, lentils and some fruits.

Thanks Wildswan I am separating out low carb from slow release carb, so that when I see the specialist I can prove that I understand about the diet. I had never realised until starting this thread they were two different things.

Low carbs means not many carbs.
Carbs are pasta, potatoes, rice, anything made from flour, starchy fruits and veg.

Carbs used to be called "simple carbs" and "complex carbs", the complex ones being the slow-release carbs like brown rice. (White rice is a simple carb.)
