The colouring you get is from baked on food or spills, keep it clean and you will be fine.
I have an assortment of pans, some have a copper ‘sandwich’ on the base, my frying pan is from the time I had an Aga, my casserole pot is Cast iron.
All work perfectly well and hob is un scratched after 12 years.
