This thread is for the 10 gransnetters who took part in the Hellmann’s ‘Sandwich of the Century’ challenge as part of their
LoveFood Hate Waste campaign.

Non-testers: Hellmann’s would love to know if you use leftovers in your sandwiches. Do you regularly use your leftovers in a sandwich for lunch the next day? If you don’t, do you think it’s something you’d try? Every non tester who adds their thoughts will be entered into a prize draw to win a Hellmann’s hamper worth £50.

Here’s what Hellmann’s have to say, “For 100 years, Hellmann's Mayonnaise has been at the heart of the greatest Sandwiches but did you know that every day we throw away 200,000 loaves of bread and are even careless with our fillings for example, nearly three million tomatoes, and one million slices of ham are disposed of and not eaten?! At Hellmann’s, we love food and we believe eating should be a moment of joy. That's why we hate food waste and are now encouraging you to use your lovely leftovers!"

Testers were sent some Hellmann's mayonnaise along with a welcome pack.

Testers: We’ve got a set of questions we’d like you to answer about making sandwiches and how you found the Hellmann’s challenge. Please also feel free to add any other thoughts you may have.

1. How often do you make sandwiches for yourself and/or your family?
2. How many different types of sandwich filling do you have in one week?
3. Do you make sandwiches the night before or are you an early riser?
4. What are your hints and tips to keep your bread fresh?
5. What ideas did you/ your family come up with for using leftovers in sandwiches? What worked well/ what didn’t work out so well?
6. Do you have a favourite sandwich you already made regularly with your leftovers?
7. After taking part in the challenge do you think you will be more inventive in your sandwich fillings featuring Hellmann’s Mayonnaise?

The best way of using Hellmans is this:

Gently poach fresh two fillets of salmon, cool and then flake and mix with a tablespoon of Hellmans mixed with a good squeese of lemon juice.

Then line a bread tin or terrine with some smoked salmon which you have pressed out with the blade of a knife to make it go further.

Layer up the terrine with alternate layers of the salmon mixture and tiny just poached vegetables from the following list: green beans, courgettes, red or yellow pepper, peas, baby corn, fennel or carrot.

Press overnight in the fridge with weights on the top.

Turn out and serve in slices, either as a starter or with crusty bread for carry out.

I make sandwiches at leas 5 times a week and try to use as much variety as possible, even when using up leftovers, I try to make them fresh.
I keep my bread in the larder in some of those specia; bags that keep it fresh,
We add various pickles and mayos to anything, most things work well and get eaten.
My favourite sandwich is tuna, chopped onion and sweetcorn mixed with hellmans and served with a side salad or with salad on the sandwich
I already try to be inventive , I think sandwiches are much underrated and can be spiced up a lot to make a filling meal.

This can be used for a sandwich particularly in a roll. ( but I prefer it as a salad)

Oh yes!
Line a salad bowl with salad leaves
Chop leftover chicken into small chunks
Carefully mix cottage cheese with some Hellmann mayonnaise salt and pepper to taste.
Drain a jar of asparagus tips (or use fresh)
Chop an apple and wash in lemon juice
Carefully fork all the ingredients together and pile on top of the leaves.
I usually reserve few pieces of white meat and a couple of asparagus tips to decorate on top.
It's lovely, healthy, not fattening and tastes delicious.

I think I might be addicted to Hellmann's Mayonnaise!
Sandwiches are a lunchtime standby here, and most get a huge dollop of Hellmann's.
Favourites are egg mayonnaise, BLT, tomato, and of course, left over roast chicken. A hot chip butty with lashings of Hellmann's is food for the Gods on a cold wet day.
I use Hellmann's as the base for other sauces too, seafood sauce to dunk fish goujons or scampi in, mustard mayo for cold sausages, 'broken' with cream or yoghurt to drizzle on asparagus, are just some of the tasty treats Hellmann's helps me make.
I don't think a day goes by in this kitchen when the Hellmann's jar is not opened!

Pretty much every day - we have dinner in the evenings so lunch is often a sandwich and of course packed lunches for work !

2. How many different types of sandwich filling do you have in one week?

Its never the same thing twice. Theres just too much choice and perhaps that's what contributes to the wastage , we have far too many things open at once !!

3. Do you make sandwiches the night before or are you an early riser?

Never the night before, although many, many years ago, I would make them en masse and freeze them, taking out a pack every day! I wouldn't say they were good, just time saving LOL

4. What are your hints and tips to keep your bread fresh?

in winter I keep it in a huge sealed plastic box, and in the summer in the fridge.

5. What ideas did you/ your family come up with for using leftovers in sandwiches? What worked well/ what didn’t work out so well?

What we did was work out what we could make with leftover to go WITH a plain sandwich , so for instance we had ham sandwiches with a great sweetcorn and cheese dip , a little mayo , a little cream if you have it, bake it in the oven for 15 mins till golden brown and bubbling and its delicious ! We varied it with some chopped peppers , and also toasting sandwiches ! I cant say its calorie conscious but it is yummy!!

6. Do you have a favourite sandwich you already made regularly with your leftovers?

It has to be tuna mayo, sweetcorn and thinly sliced cucumber ... oh yes !!

7. After taking part in the challenge do you think you will be more inventive in your sandwich fillings featuring Hellmann’s Mayonnaise?

Yes, and even trying some more chips and dips style things...I didn't think about actually cooking with it , but its lush :-)

our sandwich using leftover food is homemade tikka marsala chicken curry and topped with Hellmans mayonnaise, on 50/50 bread then toasted to bring out the flavour.
We have sandwiches most days and try different fillings often.
We make our sandwiches fresh each day.
We have tried ham salad and mayonnaise.
Brie and cranberry sauce.
Bolognaise and hellmans.
Corned beef salad and hellmans.
We keep our bread fresh in the fridge.
We also use hellmans on jacket potatoes.

Hellman's is BRILLIANT. Been using it forever. It transforms a chicken salad toasted club sarnie. Adds a whole new dimension to fish 'n' chips. But my favourite is a 'salmon pat'* sandwich in white bread with some pickled cucumber on the side. To dine for!!

* Salmon pats are an old family recipe - a version of salmon cakes made with drained tinned red salmon, grated onion, parsley and lemon juice with egg and matzo meal to bind and then medium-deep fried in fresh corn oil for 5-10 mins each side and drained off on kitchen paper.

cold pork and beetroot and Hellmans was a big hit on Monday as people came in after battling with the storm

Tuesday saw us munching on cold sausages(left from monday's dinner) this was accompanied between wholemeal bread with sliced tomatoes and lettuce and Hellmans

Wednesday- tinned tuna (recued from the back of shelves on stock checking before shopping)Hellmans -simple but scrummy - a hit with eldest grandchild

Thursday -left over veg mixed with hellmans and the last slices of sliced ham made up our dinner time sandwich

today Friday - hellmans/ sliced up cold lamb chop and beetroot and tomato all in homemade bread sandwich

Left over cold chicken/beef for sandwiches, but I discovered long ago that any meat and salad type sandwich is much better if you leave out the butter/spread type stuff and just use mayo.

We often used left over roast meat for sandwiches, and yes, we do use mayonnaise...my favourite is left over thinly sliced roast beef, salad, and mayo sandwiches. We also use leftovers for salads or simply pop leftovers to use as a meal on another day. Left over veg is used to make soup.

My husband has sandwiches most weekdays and if the grandchildren are here we have them most days
We don't have much variety in the fillings unless the family are here when they can vary according to what they want.
As we don't have to go to work, sandwiches are made fresh when they are needed unless I am going out and need to leave something ready but they are rarely made before the day on which they are needed
Bread is usually kept in the freezer as the amount needed varies and a loaf could last for a week and would go off. If it's an unsliced loaf, I would tend to freeze it in several large pieces. But sliced bread or rolls can be frozen as they are and just got out when needed.
Cold meats always go down well as does cheese but they can be made interesting with the addition of small amounts of leftover vegetables or fruit. Mixing a teaspoon of curry powder into mayonnaise and then adding diced left over carrots, and peas makes a good sandwich spread but softer vegetables like broccoli aren't as good. Chopped grapes, peaches or apples give the spread more of a sweet and sour flavour.
Cheese that has gone hard can be used up if it is grated and then mixed with Mayonnaise, and grated onion, chives or chopped spring onions add more variety. This mix can also be used to spread direct onto the bread instead of butter/marge with slices of left over chicken giving a tasty sandwich
Chicken pieces with tomato and lettuce are a favourite with the mayonnaise used instead of spread, particularly with herbs and spices added to it
We have always got mayonnaise in the fridge. It makes an easy sauce with cold pasta or rice, but that is not as useful in sandwiches. However itt makes a good basis for a lunch that doesn't involve bread.

Usually eat leftovers as part of a meal the next day but had never thought of putting them in a sandwich. Some great ideas from this thread!

A dip which can be used with leftover raw carrots, cucumber and tortilla chips.

Mix 1 cup of mayo with a teaspoon each of curry powder or chilli powder ,garlic salt, horseradish and vinegar. Mix all together and enjoy.

Another spicy dip can be made by mixing mayo with harissa to taste.

I have used Hellman's for years and, before it was available in Australia, I used to take supplies out for DD2 who found it hard to live without her 'injection' of it! My favourite sandwich filling is simple - egg mayonnaise - no more no less. [yum yum emoticon]

I never throw anything away so find Hellman's very useful. I always add mayonnaise to tinned tuna and salmon.. It is great with chips, preferably chunky ones! It is obviously good with cold chicken and will be used a lot at Christmas with turkey and ham. perhaps my favourite is with juicy prawns or langoustines if I can afford them.

Thank you for all these ideas .I never used to buy mayo before my son-in-law came on the scene but he has it mixed in with absolutely everything and the grandchildren have followed him asking for "naise" since they were very small .These ideas have given me something else to work with as I too hate waste of any kind. thlsmile

We always use mayo (Hellmanns of course) instead of butter, we never throw food away, there is always something else to use it for......like on Sunday we had a roast pork dinner. The left-over pork I used to make a sweet & sour pork with noodles the following day and the potatoe's and veg made a nice bubble and squeak for breakfast.

I work two days a week with one other person, he loves if I take my left over baked ham with crusty bread and salad. I try my best not to waste grub. A slather of Hellmans has recued many a morsel in this house!

Left over anything on a fajita/toasted pitta/bagel with a few twists of black pepper, Hellman's and a splash of sweet chilli sauce. yum. A particular favourite is cold sausages sliced into a toasted bagel with mustard and mayo.

In fact, mayo is a great substitute for butter in sarnies as it spreads straight from the fridge and you can lower your sat fat intake by not having both.

Some left overs are best not slapped between bread - eg, pasta. To make a yum pasta salad, put the leftovers in a plastic container with some shredded lettuce, seasoning such as pesto, chilli, lemon juice and a dash of Hellman's with some olive oil & balsamic vinegar. happy, happy days and it fills even the most sporty and ravenous of teenagers.

I use left over chicken chopped up with a few thyme sprigs, leaves picked, 1/2 small mango, peeled, sliced & stoned, a tomato sliced, & some gem lettuce sliced and mixed into Hellmans mayonaise with a little lime juice.

Left over grated cheese, onion, stick of celery, chopped and mixed together with Hellmans, between any sliced bread.

Tuna (if any spare), left over chopped green pepper, (left over sweet corn from can), all mixed with Hellmans between slices of bread. Delicious.

I've certainly looked at what I have had left over in my fridge in a different way over the past few weeks.
Eggs that have been on their use by date have been scrambled and mayonnaise added with any left over bacon & tomatos and served on a toasted sandwich,a nice change and a complete breakfast meal.
Thanks so much for the freebee Hellmann's which I have received another way of saving some £s and helping with the food budget.
