Non-testers: Hellmann’s would love to know if you use leftovers in your sandwiches. Do you regularly use your leftovers in a sandwich for lunch the next day? If you don’t, do you think it’s something you’d try? Every non tester who adds their thoughts will be entered into a prize draw to win a Hellmann’s hamper worth £50.

Testers were sent some Hellmann's mayonnaise along with a welcome pack.
Testers: We’ve got a set of questions we’d like you to answer about making sandwiches and how you found the Hellmann’s challenge. Please also feel free to add any other thoughts you may have.
1. How often do you make sandwiches for yourself and/or your family?
2. How many different types of sandwich filling do you have in one week?
3. Do you make sandwiches the night before or are you an early riser?
4. What are your hints and tips to keep your bread fresh?
5. What ideas did you/ your family come up with for using leftovers in sandwiches? What worked well/ what didn’t work out so well?
6. Do you have a favourite sandwich you already made regularly with your leftovers?
7. After taking part in the challenge do you think you will be more inventive in your sandwich fillings featuring Hellmann’s Mayonnaise?

Testers - to answer the list of questions. But non testers can take part too simply by adding their thoughts on using leftovers for sandwiches (see above for more details) and one of them will win a hamper as a separate thing. Hope that helps
Right, here you go. I love left overs (but husband refuses to eat them, something to do with his mother serving bubble and squeak for breakfast on a regular basis).
My personal favourites are: Hot savoury mince on toast (left over cottage pie) with a poached egg on top and a drizzle of ketchup. A sandwich made with cold roast lamb and a smear of chutney.
Some of the ways in which I disguise leftovers for the benefit of husband - Monday's Spag Bol sauce in Wednesday's lasagne, with roast butternut to pad out the filling. Savoury mince in a 'Mince and Macaroni' special (basically mix the mince with cooked macaroni, chuck cheese sauce over the top with grated cheese to finish and pop in the over). Pasta arrabiata from left over chicken.
Off to chomp cold fish cakes straight out the fridge from last night now. .

Left-over cold chicken mixed with mayonnaise (Hellman's of course) and a teaspoon of curry powder, on brown rolls with some salad thrown in.
I would also use left-over cold salmon if I had any, also with mayo and cucumber.
Cold bacon used in BLT on brown bread.
Chicken and grated cheese mixed with mayonnaise (Hellmann's proper mayo definitely is the best for this) popped on toast and bubbled under the grill. Yummy.
I'm on a roll now. This isn't about left overs - but an aunt of mine gave me this as a tip years ago and I do it all the time:
Mix good quality mayonnaise with fruit chutney in equal quantities and smear over unskinned chicken breasts before baking. It is tasty, adds flavour and provides the necessary oil (fat) needed for roasting. I do the same with whole roast chicken.
Sounds good - I recently discovered tomato and chilli chutney - that would work beautifully. I frequently use Hellmans instead of butter when making a sandwich.
I've certainly looked at what I have had left over in my fridge in a different way over the past few weeks.
Eggs that have been on their use by date have been scrambled and mayonnaise added with any left over bacon & tomatos and served on a toasted sandwich,a nice change and a complete breakfast meal.
Thanks so much for the freebee Hellmann's which I have received another way of saving some £s and helping with the food budget.
I really like leftover chicken with chopped tomato, basil and mayo, all the family love these sandwiches, they are a reall winner.
Left over grated cheese, onion, stick of celery, chopped and mixed together with Hellmans, between any sliced bread.
Tuna (if any spare), left over chopped green pepper, (left over sweet corn from can), all mixed with Hellmans between slices of bread. Delicious.
I use left over chicken chopped up with a few thyme sprigs, leaves picked, 1/2 small mango, peeled, sliced & stoned, a tomato sliced, & some gem lettuce sliced and mixed into Hellmans mayonaise with a little lime juice.
Left over anything on a fajita/toasted pitta/bagel with a few twists of black pepper, Hellman's and a splash of sweet chilli sauce. yum. A particular favourite is cold sausages sliced into a toasted bagel with mustard and mayo.
In fact, mayo is a great substitute for butter in sarnies as it spreads straight from the fridge and you can lower your sat fat intake by not having both.
Some left overs are best not slapped between bread - eg, pasta. To make a yum pasta salad, put the leftovers in a plastic container with some shredded lettuce, seasoning such as pesto, chilli, lemon juice and a dash of Hellman's with some olive oil & balsamic vinegar. happy, happy days and it fills even the most sporty and ravenous of teenagers.
I work two days a week with one other person, he loves if I take my left over baked ham with crusty bread and salad. I try my best not to waste grub. A slather of Hellmans has recued many a morsel in this house!
We always use mayo (Hellmanns of course) instead of butter, we never throw food away, there is always something else to use it for......like on Sunday we had a roast pork dinner. The left-over pork I used to make a sweet & sour pork with noodles the following day and the potatoe's and veg made a nice bubble and squeak for breakfast.
Thank you for all these ideas .I never used to buy mayo before my son-in-law came on the scene but he has it mixed in with absolutely everything and the grandchildren have followed him asking for "naise" since they were very small .These ideas have given me something else to work with as I too hate waste of any kind.
I never throw anything away so find Hellman's very useful. I always add mayonnaise to tinned tuna and salmon.. It is great with chips, preferably chunky ones! It is obviously good with cold chicken and will be used a lot at Christmas with turkey and ham. perhaps my favourite is with juicy prawns or langoustines if I can afford them.
I have used Hellman's for years and, before it was available in Australia, I used to take supplies out for DD2 who found it hard to live without her 'injection' of it! My favourite sandwich filling is simple - egg mayonnaise - no more no less. [yum yum emoticon]
A dip which can be used with leftover raw carrots, cucumber and tortilla chips.
Mix 1 cup of mayo with a teaspoon each of curry powder or chilli powder ,garlic salt, horseradish and vinegar. Mix all together and enjoy.
Another spicy dip can be made by mixing mayo with harissa to taste.
Usually eat leftovers as part of a meal the next day but had never thought of putting them in a sandwich. Some great ideas from this thread!
My husband has sandwiches most weekdays and if the grandchildren are here we have them most days
We don't have much variety in the fillings unless the family are here when they can vary according to what they want.
As we don't have to go to work, sandwiches are made fresh when they are needed unless I am going out and need to leave something ready but they are rarely made before the day on which they are needed
Bread is usually kept in the freezer as the amount needed varies and a loaf could last for a week and would go off. If it's an unsliced loaf, I would tend to freeze it in several large pieces. But sliced bread or rolls can be frozen as they are and just got out when needed.
Cold meats always go down well as does cheese but they can be made interesting with the addition of small amounts of leftover vegetables or fruit. Mixing a teaspoon of curry powder into mayonnaise and then adding diced left over carrots, and peas makes a good sandwich spread but softer vegetables like broccoli aren't as good. Chopped grapes, peaches or apples give the spread more of a sweet and sour flavour.
Cheese that has gone hard can be used up if it is grated and then mixed with Mayonnaise, and grated onion, chives or chopped spring onions add more variety. This mix can also be used to spread direct onto the bread instead of butter/marge with slices of left over chicken giving a tasty sandwich
Chicken pieces with tomato and lettuce are a favourite with the mayonnaise used instead of spread, particularly with herbs and spices added to it
We have always got mayonnaise in the fridge. It makes an easy sauce with cold pasta or rice, but that is not as useful in sandwiches. However itt makes a good basis for a lunch that doesn't involve bread.
We often used left over roast meat for sandwiches, and yes, we do use mayonnaise...my favourite is left over thinly sliced roast beef, salad, and mayo sandwiches. We also use leftovers for salads or simply pop leftovers to use as a meal on another day. Left over veg is used to make soup.
Left over cold chicken/beef for sandwiches, but I discovered long ago that any meat and salad type sandwich is much better if you leave out the butter/spread type stuff and just use mayo.
cold pork and beetroot and Hellmans was a big hit on Monday as people came in after battling with the storm
Tuesday saw us munching on cold sausages(left from monday's dinner) this was accompanied between wholemeal bread with sliced tomatoes and lettuce and Hellmans
Wednesday- tinned tuna (recued from the back of shelves on stock checking before shopping)Hellmans -simple but scrummy - a hit with eldest grandchild
Thursday -left over veg mixed with hellmans and the last slices of sliced ham made up our dinner time sandwich
today Friday - hellmans/ sliced up cold lamb chop and beetroot and tomato all in homemade bread sandwich
