If you try strike through on some (all) iPads instead of -- you get —. It’s really annoying. To get round it you have to do it as bluebelle said in two stages. Type one - then the word then another - . Then go back to the beginning and type another - in front of the first - without any spaces so it looks like this -- and not like this — then do the same at the other end and you should get this .

The little dashes don’t work the same on an iPad as they do on a PC Chewy it’s a bit of a faff but it can be done .

Does anyone else see the 4 little circles underneath the text box? One has a smiley face, one has an "I", one has a "@" and the other a little paperclip. If you click on the "I", that tells you how to underscore, italicize, embolden and cross out.
