I hope you’re not planning to visit Hong Kong that won’t be good, otherwise as long as you are reasonably fit do as much as you feel able.
There will be plenty of others just like you or less able, enjoy the trip

I am very envious of you birdwatcher. I visited China twice when my son worked there. It is a wonderful country - far too big to see everything.

Make sure you always have water with you. Hand wipes and tissues - the loos are much improved but you may find some that aren't. I think you will manage fine, but for visits to the Wall you can always just walk a little way and then sit and wait for the rest to come back. Try taking one of those walking sticks you can sit on and use it at any opportunity.

Food - well, it is different, but you can usually find something on the menu that you can manage. Pinch some bananas at your breakfast and take them with you on day trips in case.

Be prepared for "crowds" at every tourist spot - it can be a bit overwhelming. I had never held onto my son's hand so much since he was three as I did in China, I was terrified I'd get lost!

We did a tour of China a few years back and it was not quite what I expected, in a good way, but it is even more developed now with high rise flats. One down side was the number of factories we had to visit and you could only avoid going in one or two and everything we bought fell to pieces when we got home, but they were only little items so no big loss. As with the other stops which will probably be at some beautiful gardens or similar these shouldn't be a problem. The Wall may be a bit of a challenge but you don't have to go all the way up. The Terracotta Army are housed in a museum complex with lovely gardens and easy to walk round. The hotels were very good standard and I am sure you will be o.k. with the food, unless you are really fussy, and there are plenty of shops and the usual restaurant chains you'll find here.
We found the biggest challenges were trying to cross the roads due to the volume of traffic, ages sitting in the coach in the traffic jams on the roads which I think are worse than here and more polluted and all those sales people with whom my DH enjoyed bartering with.
You don't say what time of year you are travelling but we went early March and the temperatures varied greatly. Bejing was cooler but we were in t shirts, Xian was really hot, Singapore was very hot and humid. Perhaps it would be worth buying a little fan before you go.
Whatever you do and at whatever pace you go the tour guide will ensure you are accommodated. Enjoy every minute and I wish I was coming with you.

It's been over 20 years since I went to China but I loved it. Food was lovely and the people were nice. They do like you to spend your money though. At the Great Wall all the market stall people were screaming to get your attention. You need to haggle over everything there. They will start high ( in dollars) usually, but things may have changed since then. I wouldn't advise going to the Chinese opera unless you can put up with hours of high pitched screeching.

Beijing is wonderful, as is Hangzhou with its west lake. The terracotta warriors are incredible. I know of a great and cheap tour agency for the terracotta warriors. A mini bus of your own and a knowledgeable guide, if you're interested. The wall, WOW. Best thing I saw in China in my whole 3 years there. If you're in Shanghai, Guanfulin, the site of the initial / first settlement of Shanghai is beautiful. Other than that though, old Shanghai is almost completely gone. Knocked down and redeveloped.

But yes. Lots of walking.
