Ingredients

250g slab of salted butter (the salt helps bring out all the flavours, I find)
175g sugar
As much runny honey as you get to stick to a dessert spoon, or the equivalent in thick honey
As much golden syrup as you can get to stick to a tablespoon
(NB use real spoons for this. The little hemispherical measuring spoons don't have enough sticking edge!)
350g porridge oats
A very heaped tsp ground ginger (or to taste)
A level tsp ground cinnamon
A shake or three of allspice
A heaped tsp ground coriander seed
Handfuls of the following (or similar things):
Brazil nuts
Hazel nuts
Almonds
Walnuts or pecans
Pumpkin seeds
Sunflower kernels
Sesame seeds
Poppy seeds

Handy Hint

You can also add dried fruit. Chopped dried apricots go particularly well.

Method

1. Put the butter, sugar, syrup and honey in a large pan and melt over a low heat.
2. Grind the nuts and seeds in a blender or food processor, or chop them to the size you want.
3. When the butter mixture is melted, add all the other ingredients, stir vigorously and tip all into a large swiss roll tin lined with baking parchment.
4. Bake at gas no.3, 300-325°F, 160°C for approx. 25 minutes.
5. Cut into squares, or whatever, while hot and leave in tin to cool.

I substitute porridge oats for gluten free porridge. My gd is a coeliac and I have adapted many recipes to suit her.

This recipe has evolved over many years. The original was 10oz rolled oats, 6oz butter, and 4oz sugar. To that I added some crushed coriander seeds and it grew from there. March 2012 I reduced the amount of sugar to 100g.

I have developed this recipe over 35 years from a simple one of 6oz butter, 4oz sugar and 10oz rolled oats with a little crushed coriander seed added. It has been voted 'the best flapjack ever' by several flapjack fans, including me! I eat a piece of it every morning with my first cup of coffee, and often have some in the afternoon too.
