Ingredients

140g (5oz) currants
140g (5oz) sultanas
140g (5oz) brown sugar
Finely grated rind of 2 oranges
250ml (1/2 a pint) hot tea
280g (10oz) self raising flour
1 egg, lightly beaten

Handy Hint

Very easy recipe. Spices (mixed spice?) may be substituted for orange rind, or it can be left out completely.

Method

1. Put fruit, sugar and orange rind into a bowl, add hot tea, stir well, cover with clean tea towel and leave to stand overnight.
2. Grease 8" tin.
3. Stir flour, fruit and egg into fruit mixture and mix well.
4. Bake in cool oven (150C/300F) for 1 and a half hours. Insert skewer to see if cooked (needs to come out clean).

This tea bread was so easy to make. It is delicious. Slice and spread with butter. My husband loved this and I can tell it won't last for long.
