Ingredients

For the Pudding:

1 cup chopped dates
3/4 cup of boiling water
1 tsp bicarbonate of soda
3 tbsp butter
3/4 cup of sugar
1 egg
1 1/4 cups plain flour (sifted)
4 tsp baking powder
Pinch of salt

For the Syrup:

1 1/2 cups sugar
3/4 cup water
1/2 cup of Brandy
1 tbsp butter
1 tsp vanilla essence

Decoration:

Glacé Cherries and dates

Handy Hint

This gives a similar result to sticky toffee pudding and is delicious at Christmas. It is suitable for home freezing and makes TWO - so you can eat one and freeze one!

Method

1. Sprinkle bicarb over dates and add boiling water. Leave to go cold.
2. Beat butter, sugar and egg well together and mix in the cold date mixture.
3. Add other dry ingredients sifted together. Mix well and bake in 2 x 20cm (8") pie plates for approx 20 mins at 190C (375F/Gas5) Leave until cold.
4. Make syrup by boiling water and sugar for 5 mins.
5. Add other ingredients. Pour over COLD tarts. Decorate with glacé cherries and dates.

Serve cold with cream or ice cream.

A lovely dessert which never fails to impress. Preparation is very simple. Alcohol evaporates off so it's not alcoholic - just a great flavour. I would say it's a cross between a sticky toffee pudding and a rum baba (if you remember this iconic dessert from the 1970s!)
