Ingredients

50g fresh baby spinach leaves (check if washed or not)
A knob of butter
1 sweet potato (baked with a little butter & parmesan - if liked - and cooled
125ml milk

Handy Hint

Use this as a base and add chopped/minced chicken, fish etc. Purée for babies but chopped for toddlers

Method

1. Steam spinach for two minutes or so until wilted.
2. Remove spinach from pan, squeeze out any excess water.
3. Melt butter in pan & sauté spinach for one minute. Open baked potato and scoop out the flesh, then blend with sautéed spinach & milk to a purée.

A favourite of my grand daughter & easy to adapt. Sweet potato being better than the ordinary spud.
