Ingredients

1 large baking potato for each person
Olive oil (my Godmother would have used dripping!)
Seasoning

Method

1. Pre-heat oven to 200C and scrub the potatoes, removing any blemishes and pat them dry.
2.Grease a large baking tray
3. Cut each potato in half horizontally across the potato or if you are using very large potatoes into thick slices horizontally across the potato. You are looking for slices about 2cms thickness.
3. Now with the exposed surface of the potato uppermost, make shallow diagonal cuts across the whole of the surface in one direction and then in the other direction.
4. Put the potato halves or slices on the baking tray with the cut surfaces uppermost and drizzle olive oil over the top. Season with salt and pepper.
5. Cook for 30-40 minutes until the potatoes are cooked and the surfaces are golden-brown

I've done these for years without oil or dripping. Works like a dream! I don't pat them dry...
