Ingredients500g pack frozen fruits of the forest
Small jar of cranberry sauce
3 tbsp inexpensive port
Orange peel (finely sliced)
1-2 level mixed tbsp mixed spice according to taste
Sugar to taste
For the crumble:
175g plain flour
100g butter
60g golden caster sugar
1 tsp mixed spice |

Most supermarkets sell a good selection of frozen mixed fruit, including cherries - yum! Lovely with good quality ice cream |
Method1. In a saucepan, heat cranberry sauce and port gently until melted.
2. In a food processor, sift the flour and mixed spice. Cut butter into small pieces and add to flour mix.
3. Pulse until consistency of breadcrumbs and add sugar and pulse again.
4. Heat oven to 180C. Remove orange rind from berries and discard. Add a little sugar to berries to taste and pour into a buttered ovenproof dish.
5. Spread crumble mixture evenly over fruit right up to the edges and bake for around 30-40 mins depending on oven. Do ensure that the crumble remains golden and does not burn.
