Ingredients2 Bramley apples (peeled, cored and roughly chopped)4 ripe plums (stoned and roughly chopped) 10ml demerara sugar (optional) 500g carton fresh (ready bough)t custard Zest of 1 lemon and 1 orange 50g breadcrumbs 2 egg whites 50g caster sugar |

Method1. Preheat oven to 180C/Gas mark 4 (160C in a fan oven).2. Add apples and plums to a pan with a few drops of water. Sprinkle over sugar, if using. Heat gently till apple turns soft, then mash lightly with a fork. Put to one side. 3. Add custard to a pan, then add lemon and orange zest and breadcrumbs and heat gently for about 5-10 mins, till breadcrumbs begin to swell a little. 4. Spoon into an ovenproof dish, or individual ones, and spoon over apple and plum mixture. 5. To make meringue topping, whisk egg whites to a soft peak, then add sugar and whisk til peaks are firm. Spoon meringue to neatly cover fruit and put in oven to bake for 10-15 mins, or til meringue is crisp and golden. Serve immediately. |
