2 Bramley apples (peeled, cored and roughly chopped)
4 ripe plums (stoned and roughly chopped)
10ml demerara sugar (optional)
500g carton fresh (ready bough)t custard
Zest of 1 lemon and 1 orange
50g breadcrumbs
2 egg whites
50g caster sugar

Method

1. Preheat oven to 180C/Gas mark 4 (160C in a fan oven).
2. Add apples and plums to a pan with a few drops of water. Sprinkle over sugar, if using. Heat gently till apple turns soft, then mash lightly with a fork. Put to one side.
