Ingredients500g dried mixed fruit (sultanas, raisins and currants)100g finely chopped mixed peel (candied peel and/or any citrus fruit peel) 180g grated apple (Bramleys are best but any apple is ok) 120g suet (vegetable or beef) 200g soft brown sugar 70g blanched chopped almonds 1/2 tbsp mixed spice (cinnamon and/or nutmeg if you don't have mixed spice) Zest and juice of one orange Very large splash of brandy |
Handy HintIf you are using the rind of fresh fruit rather than shop-bought candied peel, do this last - same with any fresh fruit you use in the mix (especially to stop apple browning). My next plan is to try adding a few chopped cherries! Also, I check the dried fruit first for those annoying stems sometimes missed - saves picking them out of your teeth later! The mincemeat mix will keep for a year in airtight jars. |

Method1. Place ingredients in a large bowl and mix thoroughlyFor egg-free mince pies, mix 225g margarine, 350g plain flour, 100g icing sugar - once you have crumble-like mix start pressing into a few large balls. 2. Roll mix into 12-18 smaller balls (bit smaller than a golf ball), shape into circle in hands or in the tin - add a good spoonful of your mincemeat mix to each mince pie then put your lids on (made the same way as the bases just slightly smaller) 3. Bake for 12-15 minutes until pale brown, cool a little, and eat. Easy lazy pastry! |
