Ingredients

1 medium can apricots
1 orange jelly
1/4 litre (1/2 pint) water
1/2 litre (1 pint) carton double/whipping cream
28g (1oz) butter
1 tbsp golden syrup
55g (2oz) cornflakes

Method

1. Sieve or liquidise the apricots.
2. Dissolve jelly in the water - add apricot juice - then sieved apricots. Leave to set
3. For the topping - whip carton of cream and put on top of jelly.
4. Melt butter and golden syrup. Bring to boil - allow to go cold and then add cornflakes until syrup mixture is incorporated. Spread over cream. Put in fridge to set.

Recipe used in our family for many years. Handwritten recipe by my mum. Lovely fresh pudding with crisp crunchy topping.
