IngredientsOlive oil1 onion (chopped) 3 peppers (either red, yellow, orange, or just 3 red) 1 clove garlic Pinch chilli flakes 1 potato (peeled and chopped) 1 litre veg/chicken stock 1 tbsp tomato puree 1 can chopped tomatoes |

Method1. Fry onion in 1 tbsp olive oil. Add peppers, garlic, chilli flakes and potato. Fry until beginning to colour.2. Add tomato puree, stock and chopped tomatoes. Bring to boil and simmer for 20 mins until all cooked through. 3. Cool and then blend with stick blender until fairly smooth. (Liquidise and sieve if want a smoother soup) Add salt and pepper if needed. Enjoy! | |||||||||||||||||||
