Ingredients

For the pastry:

125g (4oz) plain flour
Pinch of salt
55g (2oz) butter (cubed and straight from fridge)
30-45ml (2-3 tbsp) cold water

For the sponge:

55g (2oz) butter (cubed)
55g (2oz) caster sugar
55g (2oz) self-raising flour
I medium free-range egg
1 tbsp milk

For the filling:

2 tbsp jam of your choice

Handy Hint

I make this with left over pastry after making a pie.

Method

1. Preheat the oven to 180C/350F/Gas 4. Put Plain flour, salt and butter in mixing bowl.
2. Rub butter into flour using fingertips until mixture is consistency of breadcrumbs
3. Add water little by little until it binds to form a dough. Wrap dough in clingfilm and chill for 10 mins
4. Put all sponge ingredients in mixing bowl and combine using handmixer
5. Grease a 20cm (8in) sponge tin or tart tin.
6. Roll out pastry in a round to fit base and sides of tin. Press down to make sure there is no air trapped
Spread jam over pastry base. Spoon sponge mix over to cover jam and spread evenly in tin
7. Bake for 20-25 minutes, or until golden-brown on top and a skewer inserted into the middle comes out clean. Serve warm with custard or as a cake

This reminds me of my mother and grandmother. You can make little individual tarts in bun tins.
