Ingredients

90g bulgar wheat
4 tomatoes
2 shallots
160g (4 large bunches) flat-leaf parsley
30g (2 bunches) fresh mint
1 tsp ground allspice
3-4 tbsp lemon juice
120ml olive oil
Salt & pepper

Handy Hint

Goes well with warmed pitta bread and cheese (a good feta, or mozzarella).

Method

1. Rinse the starch off the bulgar in cold water.
2. Put into large bowl, add diced toms and their juicy bits, finely chopped shalloots, finely chopped parsley (inc most of stalks), finely chopped mint leaves (not the stalks), allspice, lemon juice, oil, salt and pepper. Stir well, and serve.

Not cheap unless you grow your own mint and parsley, but great if you have a bumper crop! Yotam Ottolenghi shared this recipe in The Guardian last year, for which we are deeply thankful!
