1 tsp each of:

Dry mustard
Black pepper (ground)
Garlic salt
Ground ginger

3 tsp (approx) dark brown sugar
8 tbsp water
Juice and zest of a lemon and a lime
125g mango chutney (a hot and spicy one if possible)
Chicken breasts or thighs
1 bay leaf
4 cardamom pods

Handy Hint

You can vary the quantities of spices etc to taste


1. Mix all the dry spices and the sugar together (use the dish that you will cook it in, saves washing up!)
2. Roll the chicken pieces in the mix, cover with clingfilm and put in the fridge to marinate, 24 hours is best.
3. Then mix the water, juice and zest of the lime and lemon and the mango chutney in a jug, pour over chicken pieces. Add bay leaf & cardamom pods and cook uncovered at 150C for about an hour.

The beauty of this is that you put it together in advance, cook it in the dish that it was marinated in, bung it in the oven and leave it, no last minute faffing about!
