Spicy lemon chicken recipe from phoenix
Ingredients1 tsp each of:
Black pepper (ground)
3 tsp (approx) dark brown sugar
8 tbsp water
Juice and zest of a lemon and a lime
125g mango chutney (a hot and spicy one if possible)
Chicken breasts or thighs
1 bay leaf
4 cardamom pods
Handy HintYou can vary the quantities of spices etc to taste
Method1. Mix all the dry spices and the sugar together (use the dish that you will cook it in, saves washing up!)
2. Roll the chicken pieces in the mix, cover with clingfilm and put in the fridge to marinate, 24 hours is best.
3. Then mix the water, juice and zest of the lime and lemon and the mango chutney in a jug, pour over chicken pieces. Add bay leaf & cardamom pods and cook uncovered at 150C for about an hour.
