Ingredients

2 sloshes olive oil
2 large red peppers
2 large onions
2 garlic cloves
2 tins tomatoes
2 empty tomato tins of water
2 stock cubes (any flavour but veg ones for vegetarians)
2 tsp dried mixed herbs

Handy Hint

Peppers can be roasted in oven then skinned before adding. 2 sloshes of oil is about a tablespoon but I wanted 2 of everything!!

Method

1. Chop onions and crush garlic. Deseed and slice peppers.
2. Put oil in large saucepan, add oil, garlic and pepper and cook for a few minutes till soft.
3. Add tins of tomato and water (use the empy tomato tins), crumbled stock cubes and herbs.
4. Stir well, bring to the boil, cover and simmer for around 30 minutes till vegetables are soft. (Can be left longer )
5. Cool slightly and blend/liquidize.
6. Add salt and pepper, fresh herbs to taste.
7. Enjoy!!

Thanks for sharing the recipe, the soup is delicious. Just one modification for my future effects - 2 tsp herbs was way too much for me so I just put 1 in. Even that was a little too herby, so I am going with 2 pinches in my next batch.

Excellent when dieting!!! I make this soup for myself as a lunch with toast or crackers. If I feel hungry in the evening I have a mug and it fills me up. A pan lasts for 3 or 4 days. The family love it too.
