Ingredients

50g butter
300g amaretti biscuits, crushed
300g white chocolate, chopped
1 284ml pot whipping cream
1 124ml pot whipping cream

For the chocolate sauce:
100g. Dark, chocolate finely chopped
125 crème fraiche
3 tbsp caster sugar

Handy Hint

The thicker you whip the cream, the more solid the torte will be.

Method

1. Melt butter in large saucepan, add the biscuits and mix.
2. Butter an 18cm loose-based round cake tin and press biscuits into the base using back of spoon. Freeze until cold.
3. Melt the white chocolate in a bowl over a saucepan of simmering water or in short blasts in microwave. Be warned, white chocolate burns easily. Once melted leave to cool.
4. Whisk cream until stiff. Add 2 tbsp of the whipped cream to the white chocolate and stir.
5. Pour the rest of the chocolate into the cream and mix well.
6. Pour into tin and chill until firm.

Decorate with marzipan Christmas trees etc to make it festive or cranberries. Good to prepare ahead
