Creamy avocado pasta from reneesmith
Ingredients2 cups uncooked dry pasta (any type is fine)
1 large ripe avocado
¼ cup olive oil
¼ cup grated parmesan
¼ cup fresh basil leaves
2 cloves garlic
2 tablespoons lemon juice
Salt and freshly ground black pepper
Method1. Cook pasta according to the package, and drain well.
2. While the pasta is cooking, place the avocado, olive oil, parmesan cheese, garlic, basil and lemon juice in a blender or food processor and blend well, until it's creamy.
3. Toss the pasta with the avocado sauce. Season with salt and pepper to taste and top with more parmesan cheese, if desired. Enjoy!
