Ingredients

1 x 500ml tub of good quality yogurt
2 x 500ml tubs oats (use empty yog pot)
2 x tsp baking soda
1 egg
Handful each sunflower and pumpkin seeds

Handy Hint

By the 2lb loaf tin liners. Can be made with low fat yogurt, and gluten free oats.

Method

Mix egg and yogurt.
Combine with dry ingredients.
Mix well and spoon into a lined 2lb loaf tin.
I top with a sprinkle of seeds pressed down.
Bake for 45 minutes. Remove and carefully turn loaf upside down.
Return to the oven for 10-15 minutes.
Every oven is different, check if it's ready if a skewer or cocktail stick comes out clean.
This is a very forgiving loaf, it doesn’t mind a few extra minutes so err on the side of over rather than under cooking.

A lovely loaf I make once a week. It is quite dense, similar to a wheaten loaf/bread. I slice and freeze. Lovely toasted also. High fibre and protein, complex carbs and about 125 super nutritious calories a slice.
