Duck eggs. What to do with them?

Just that really. I've been given a dozen duck eggs by a neighbour.

I thought of boiling a couple for breakfast but decided against it. What do they taste like?. I must have eaten them in the past but not recently.

Can you bake with them just as hen's eggs?

I’ve never baked with them but they taste great fried or boiled. Like a hens egg but the taste is richer/ bit stronger and the tolls are usually more orange than yellow

Duck eggs make wonderful cakes.
The rich yellow yolks give great colour.
Try making fat less sponge with them.

They are lovely in a Victoria sponge. My late mother-in-law used them when she could find them. She was a wonderful baker. My husband got a raw deal when he married me. I dislike baking intensely.

Duck eggs taste much richer than chicken eggs but makes lovely cakes .

Poached with avocado, boiled with soldiers. I eat them most days and they are delicious. Big yolks and less white, just as I like it! Enjoy

Soft boiled ducks' eggs are delicious in my opinion, slightly more creamy taste than hen's eggs. And yes, you can bake with them. I remember being told that anyone who had ducks did so during the war when eggs were ratuibed,

We used to keep several ducks on our land and so we rarely had hen's eggs. Duck eggs are far superior imho

My OH loves his duck eggs which he buys from our local farmers market every other week.
I have used them for baking sponges and they turn out a beautiful yellow colour most times you only need one duck egg as opposed to 2 x hen eggs

No no don't use them for baking etc. They are too good for that.

Fry them, poach or boil them, they are lovely. Enjoy them

Like goose eggs they make good omelette or great fresh pasta! We used to have a couple of ducks and now have 2 geese, a male and female. Griselda only lays in the spring so we rely on hens eggs from our own birds for the rest of the year!

I like omelettes made with duck eggs and a little bit of grated cheese.

Can remember my Grannie always being a bit careful with Duck's eggs preferring to bake with them as Ducks are a bit more water based and their eggs can get a bit muddy and therefore less hygienic than a hen's egg. I suspect your friend's ducks are kept in decent hygienic conditions!

Just before Easter I noticed a couple of mallards chasing each other in my garden several times. I didn’t think much about it until a few weeks later I found a nest with 9 duck eggs among the long grass in my “wild area”. I left it for well over a week, then decided it was totally abandoned so I hard boiled the eggs, removed the shells and put them out for the wild birds. The local jackdaws were delighted!
