Ingredients1 tbsp olive oil
3 rashers of smoked streaky (chopped)
1 large onion (chopped)
1 cloves garlic (crushed)
500g lean minced beef
1 tin chopped tomatoes
100g mushrooms (sliced)
1 dried bay leaves
1 tsp dried mixed herbs
Salt and Pepper
300 dried pasta
Freshly grated parmesan
Chopped parsley |

Fresh pasta can also be used |
Method1. Heat the oil in a saucepan and fry the bacon until golden. Add the onions and garlic, frying until softened.
2. Add the minced beef. Fry it until it has browned, breaking down any chunks of meat with a wooden spoon. Stir in the tomatoes, mushrooms, bay leaves and mixed herbs. Simmer gently for 30 minutes till the sauce is thicken.
3. Cook the pasta in salted water (according to instructions on the packet) Drain and place in a warm dish. Spoon over with Bolognese sauce. Garnish with parmesan cheese and chopped parsley.
