Ingredients250g long grain riceChicken stock cube 250g chicken fillets (cubed) 2 large onions 2 large red peppers Salt & pepper 1 tsp fresh ginger 3 cloves garlic (chopped) 1 tin peaches (drained and chopped) 1 tsp olive oil |

Method1. Cook the rice in a large pan adding a chicken stock cube to the water.2. Meanwhile, fry the onions, and chicken with the garlic and ginger in the oil for about 15 minutes until the onion is softened and the chicken cooked. 3. Add the red peppers and peaches and cook for a further 7 - 10 minutes. 4. When cooked add the chicken to the rice and stir. Can be served hot or cold and easy to freeze. |
