What's going wrong with my sponge cakes.

I am not getting sharp edges like I used to - the edges are all crumbly - only the edges.

This has happened for about the last 6 months or so and I'm not sureive changed anything.

I made Lemon Cupcakes to take to our Quiz night, they looked great ,golden and well risen.
Took one out of the case to try it and it was hollow!!!!!!!

It was as though it had dropped from the bottom up.
Same oven, same temperature, same recipe just weird. It has not happened since.
I made some Lemon Butter Icing and took it along so we could turn the cakes into tarts.

Well, I've just sandwiched the two halves together and the top layer snapped iyswim. It's a good job it's only friends coming for a brew and not anyone matters! grin Though actually one of them wins prizes for her cakes.

It could be that Elegran, it's 15 years old - I'll have to test it! It cooks everything else ok but they dont need it to be so precise.

When we moved here there was a new built in cooker/oven. The only two things I couldn't get 'right' were sponge cakes and meringues.

After some serious complaining to Mr. S. we bought a new one and no problems since so I think Elegran could be right; it's your oven kittylester.

I have a different problem with cakes of any sort - they just don’t keep!

Have you checked your oven temperature? It could be out.

I have been using Trex for baking and bread making. I find the bread stays fresher longer than when I used butter.
