I was going out for lunch with a friend but she's tested positive!

My fridge is a bit bare so I'll have to raid the cupboard and freezer, and having the last two champagne truffles from Mother's Day smile

Not the healthiest lunch today but we do usually eat lots of homemade soup or a salad. However today I shopped at the local farmshop and their pork pies are lovely so one of those with some piccalilli. Dinner is homemade veggie chilli with whole grain rice and some kiwi for afters so guess that's pretty healthy.

To use up the leeks and baby spinach from lunchtime I'm making leek pea and spinach soup for supper. I'm going to have it with a crusty roll.
DH is working until 8pm so it will be perfect to reheat when he comes home.

I’m having a right pig out day today. But didn’t plan it that way. Had my jacket spud as I said. Bought some chocolate raisins from the garage when I got petrol. Just finished of my grandsons pancakes he didn’t eat. I think it’s the shock of the petrol price that caused me to over eat. My DH is fine after his procedure so can’t blame that. My mince and veggie mash is ready to cook. I adore hispi cabbage Riverwalk.

Lunch was a bowl of bran flakes, didn’t feel hungry after a disturbed night and a horrible dream that shook me up.

I think tea will be minestrone soup.

ShazzaKanazza

Enjoy those champagne truffles Riverwalk.
I’m on my own for lunch so will do a jacket spud and use up some cottage cheese. For dinner I’m getting some mince to do mince and mash because DH is having an endoscopy but one where he’s asleep as it’s a bigger camera so they’ve advised his throat will be sore so he needs something soft. He loves that meal anyway.

Before throwing the box away I idly looked at the 'nutritional information' - 98 calories each shock

I love seeing what everyone is eating.

I'm low on vegetables and need to do a bit of a shop - recently been very into sweetheart/hispi cabbage! ?

Peppered mackerel and gherkins a for light lunch. I prepared bruschetta king prawn with pasta and made tiramisu for a treat tonight.

For lunch today I made this, www.abelandcole.co.uk/recipes/spice-buttered-whiting-with-golden-chips
DH said it was the most colourful meal I've ever made for him.
It was delicious, better than it looked in the picture.

Humduh Fri 01-Apr-22 14:31:41

I had tuna salad and buttered bread.

Charleygirl5 Fri 01-Apr-22 14:06:06

Lunch was smoked salmon toast on toast. Supper will be a microwavable selection of Chinese from Waitrose because I have had my left eye treated and until it returns to my normal in around 8 hours time it is not really safe for me to cook and it is too cold to have another cold meal today.

grannyactivist Fri 01-Apr-22 13:55:40

I awoke a couple of hours after going to bed last night and then couldn’t get back to sleep until after six o’clock this morning, so I’ve missed breakfast and lunch because I only woke up a short time ago. blush

Dinner tonight will be chicken thighs, jasmine rice and green beans, with a ketjap manis sauce.

PECS Fri 01-Apr-22 13:51:42

Brunch was poached eggs on toast.. tonight will be something involving butternut squash..... maybe risotto, maybe curry..

Riverwalk Fri 01-Apr-22 13:46:33

From the freezer I had sardine fillets with a salad of rocket, tomatoes, beetroot & avocado ?

Dinner will be rump steak, from the freezer, with herby chilli butter, and tenderstem broccoli ?

GrannyGravy13 Fri 01-Apr-22 13:37:18

Lunch, no chance I am looking after the two year old GC.

Dinner will be a quick walk to the local Indian Restaurant, probably Tandoori King Prawn Dansak with mushroom bahgee and either cauliflower or courgette bahgee.

Luckygirl3 Fri 01-Apr-22 13:22:34

Lunch is one quarter of a delicious chicken and leek pie that I buy at the local farm shop. I cut it onto quarters, freeze them and eat them with salad, one at a time.

Jaxjacky Fri 01-Apr-22 13:01:01

Cottage cheese with something for lunch, I don’t know why I bought it, I’d forgotten how yuk it is! I don’t normally have lunch, but I’m loathe to ditch it.
Out for dinner tonight, so I don’t know, hoping for fish.

tanith Fri 01-Apr-22 12:56:02

Boiled eggs for lunch as I have loads and I’m just cooking mince onions and carrots for shepherds pie for tonight half for the freezer.

H1954 Fri 01-Apr-22 12:55:38

It's chippy tea tonight so lunch should really be a healthier option.........I'm sitting here waiting for some inspiration ?

Auntieflo Fri 01-Apr-22 12:52:47

Bacon rolls and a cup of tea. Supper? Who knows yet?

hazel93 Fri 01-Apr-22 12:44:41

Heresy - we don't really do lunch !
Dinner will be ratatouille with chicken thighs and on this info DH will look pissed off so I will no doubt add potato wedges.

M0nica Fri 01-Apr-22 12:23:01

Main meal at lunch time: an aubergine and lentil sauce on pasta with lots of grated parmesan, stewed rhubarb. Evening meal: tomatoes on toast and fresh fruit.

Grandmabatty Fri 01-Apr-22 10:47:33

Butternut squash and sweet potato soup for lunch with a baguette and roast chicken with red cabbage and carrots for dinner.

BBbevan Fri 01-Apr-22 10:46:49

Lunch will be, smoked salmon and scrambled egg and dinner is chicken and mushroom stir-fry.

Witzend Fri 01-Apr-22 10:43:44

Dh gets his own lunch.
Mine, probably the dal left over from last night, with some also LO naan bread.

Haven’t thought about dinner yet but possibly some of my batch-cooked SDM aka ‘school dinner mince’ out of the freezer. It’s actually semi veggie, with red lentils and a lot of finely diced veg.
With mash if I can be bothered to mash, otherwise boiled potatoes and sprouts.
Believe it or not dh’s eyes will light up at the sight of this!
