Does Anyone Still Cook Chips the Old Fashioned Way?

When I was growing up nearly everyone had a chip pan filled with lard on the cooker all the time. The chips were delicious.

I was wondering if anyone still uses one or do we all use oven chips now? I used to have a deep fat fryer but it was messy and made the place smell. I wonder if in the 'olden days' all the kitchens smelt of chip fat.

I rarely cook them in a pan nowadays, usually making my own 'oven chips'. A few weeks ago, though, I fried some in rapeseed oil, doing them the proper way (twice) and they were really delicious.

When the kids were small, we had an electric fryer but I really hated sieving/staining the oil and cleaning it out was a nightmare.

I've always got oven chips in the freezer, but mainly for the DGDs. If I want chips, I will stick a large potato in the microwave for a couple of minutes, let it cool down, cut it into wedges, spray with oil and bake. Delicious!
My DM used to make delicious chips in a chip pan with lard, and I did the same many years ago, but not any longer.

I really dislike oven chips. We rarely ever eat chips anyway, so it doesn't present a problem.

I love home made fried chips but don't make them because of the faff of owning a chip pan. So I have oven chips which aren't as nice.

I never cut or cooked chips during nearly 50yrs of married life. My late DH was always in charge of chip pan on a Saturday night. Prepared the chips earlier in the day and left them soaking to get the starch out of them then drained them and dried them off with a tea towel he kept specially and then they were "twice cooked" in lard. I must admit they were very tasty!! When that phrase started appearing on restaurant menus we used to laugh.
