Things to do with sweet potatoes

It's a long story, but I am overrun with them, and wondering what to make with them.

Any suggestions, please?
P.S I don't like cooking.

I forgot about the shepherds pie people have mentioned on here. I used to put some seasoning into the mincemeat so it was flavoured up more than usual, boil my sweet potatoes until softened and mash down then top the shepherds pie with them and finish off browning in the oven always got eaten in my house. Sometimes just used half sweet potato and half ordinary potato it still tasted nice.
Also put my roasted vegetables in oven ( onion, red peppers,
green peppers, some cherry tomatoes and chunks of sweet potatoes ) can add courgettes if you like but I hate them things. The veg is lovely and also healthy.

After one try, I never buy them. I had them once at a friend's house and couldn't see the point.
Another thing, for me they're very hard to peel and slice

Sweet potatoes give a nice colour to the top of a shepherd’s, cheese & potato pies or a fish pie, but they are as the name suggests, sweet, so I have to season them to taste. (Might as well use ordinary potatoes?).
But if you have them, use them.

Oh, what about slicing, tossing in a little oil, sprinkling with (lots of) creole type spices and baking till soft. So delicious!

I love them! Polenta makes them crispy.

They are delicious in curries.

Baked with sour cream.

I’m not mad keen but we used to get them in our first lockdown veg boxes, along with butternut squash, which I wouldn’t choose, either. So they all used to go in a Thai style soup, with onion, garlic, plenty of chilli and ginger (ready made pastes from Asda), chicken stock and coconut milk.

I have the answer to your problem - sweet potato wine!

It's an American recipe so you'll have to convert the measurements - you'll need a big bucket, this recipe is for 5 gallons (20 bottles)

Oh dear, I've got into an argument, which I hate.
To me sweet potatos are one of those veg which have become trendy. like celeriac. And God forbid quinoa.

Ha ha Fennel - I love celeriac!
It makes a great coleslaw-type remoulade (by this I mean not just a sauce) and it's great in mash, or roasted or in soup.

You could eat cake all day and still have your 5 a day

Beetroot, sweet potato, courgette, carrot, parsnips.

(I wouldn't recommend it)

I love sweet potatoes and the trick to getting them crispy is to soak them in cold water for an hour in the fridge, then pat them dry and give them a slight dusting of cornflour before cooking them.

They’re great for thickening soups and add extra taste. Yum!

I like sweet potatoes when they’re mixed in with a load of other veg and roasted, seems to “hide” the sweetness of them. M&S do a sweet potato salad (find it beside the ordinary spud salads, coleslaw, etc) and it’s delicious. Very fresh tasting.

I make a delicious cake with sweet potato, I know it sounds odd but it’s akin to a carrot cake but lighter. Also I slice one up in thick slice with skin on and put in the toaster to make crisps - watch carefully so they don’t burn.

There are dozens of recipes on Pinterest that use sweet potato, some very simple using just a few ingredients. I make a casserole, any type, and layer peeled sliced sweet potato on top then drizzle before popping in the over to crisp.
