Things to do with sweet potatoes

It's a long story, but I am overrun with them, and wondering what to make with them.

Any suggestions, please?
P.S I don't like cooking.

Well, my toaster is now clogged up with curly pieces of burnt (but still soggy) sweet potatoes, so I shall try some of the other suggestions.

To those who say they make soggy mash, try baking them whole and then mashing.
This is what I do.

I usually roast them with a mix of other veggies, butternut squash/onion/carrot/courgette/garlic. Drop of olive oil and seasoning. Any leftovers make into soup.

My post hasn't appeared either. So again MissAdventure do let me know your success in growing sweet potatoes. I have tried to grow them from splits but to no avail. Believe they are very good for you and low in calories. Do buy at the supermarkets and make lovely tasty soup with them.

I just peel and cut small, then steam them to accompany salmon.
Rather bland, I know, but they make a change from white spuds.
Also, mash them up with a few white ones, but must admit, they can be a trifle soggy.

An ordinary potato can be added to sweet potato soup to dilute that dreadful sweetness!

Try putting chunks in a slow cooker with red lentils,red Thai curry paste, stock,chopped shallots,garlic, turmeric,garam masala, tomato purée. Cook on high fir 3/4 hrs. Stir in canned coconut milk to serve.
Really delicious.

I make a delicious cake with sweet potato, I know it sounds odd but it’s akin to a carrot cake but lighter. Also I slice one up in thick slice with skin on and put in the toaster to make crisps - watch carefully so they don’t burn.

There are dozens of recipes on Pinterest that use sweet potato, some very simple using just a few ingredients. I make a casserole, any type, and layer peeled sliced sweet potato on top then drizzle before popping in the over to crisp.

I like sweet potatoes when they’re mixed in with a load of other veg and roasted, seems to “hide” the sweetness of them. M&S do a sweet potato salad (find it beside the ordinary spud salads, coleslaw, etc) and it’s delicious. Very fresh tasting.

What's wrong with thickening soups with a tbs of cornflour dissolved in water?
Or 2tbs of bread crumbs?

I love sweet potatoes and the trick to getting them crispy is to soak them in cold water for an hour in the fridge, then pat them dry and give them a slight dusting of cornflour before cooking them.

They’re great for thickening soups and add extra taste. Yum!

You could eat cake all day and still have your 5 a day

Beetroot, sweet potato, courgette, carrot, parsnips.

(I wouldn't recommend it)

Ha ha Fennel - I love celeriac!
It makes a great coleslaw-type remoulade (by this I mean not just a sauce) and it's great in mash, or roasted or in soup.

To me sweet potatos are one of those veg which have become trendy. like celeriac. And God forbid quinoa.
