Anyone share their delicious quick cooking sauces?

I ask this because yesterday I made, what I thought was a delicious quick sauce over my pork mince balls.

Firstly one should fry some onions in a bit of butter and sunflower oil ( this I did leave out but still added the butter and oil.
Peel and slice two or three apples, depending on the amount of meat. Add the apples to a pan and fry along with some fromage fraiche, chicken stock and calvados or brandy with a touch if sugar. If you don’t want to add the alcohol I am sure just chicken stock would be ok. Blend the sauce in a liquidiser and there you are: so quick but tasty

I do a similar one, but instead of the apples I do mushrooms - soften them with the onions, with butter and olive oil, and then add mustard any type I have to hand, white wine, and sour cream, slat and pepper no need to blend. Great to brown some pork fillet steaks in the pan first and then add them back to the sauce before adding the sour cream.

My quick go-to is pesto mixed with creme fraiche, it's lovely with baked salmon or chicken or whatever you want.......I know it's a bit of a cheat as it uses ready made ingredients but it always goes down well!

My very quick sauce is 2 tbsp dried onions, carton natural yogurt, and 2 -3 tablespoons lime pickle. …. mix together bring to just under the boil. Lovely over chicken or pork!

Butter and olive oil in a frying pan
Spoonful of capers
Add zest and juice of a lemon
Spoonful of greek yoghurt, salt and pepper
Great over a floured,flattened pan fried chicken breast

Mix equal parts mayonnaise (Hellman's vegan works well), lemon juice, kikkoman soy sauce. Add grated horseradish to taste.

Bok choy, spring onions, celery, onions, mushrooms, spinach, (meat or not) - saute in wok. Serve over rice with sauce.

Anyone got a very quick ORANGE sauce recipe?
I can’t find a decent one that actually tastes of orange anywhere that doesn’t take ages to make?

For pork steaks, I find the famous SOAP recipe is unbeatable, and if you’re in a real hurry it can be made with frozen onions and ready-made apple sauce (home-made or bought). I am eternally grateful to FGT for that!

I can’t find a decent one that actually tastes of orange anywhere that doesn’t take ages to make?

You should definitely use orange zest if you are making a white sauce base. This will give more of an orangey taste than orange juice (which you can also include, of course)

If it is to go with duck or game, maybe a spoonful of marmalade. If it is for a pudding, maybe a teaspoonful of Cointreau or Triple sec?

The recipe in the OP doesn't sound like a quick sauce to me. But for all sauces a blender or stick blender is the answer to almost everything!

For a sauce for meatballs I soften some onions and add a tin of condensed mushroom soup. Add to browned meatballs and finish in the oven.
I also use the soup for a chicken casserole, with added mushrooms.

Inspired by a recipe that I found whilst staying in Canada :

Coca Cola Pork Chops

I use ribs for this .
I cover them in coca cola add a splash of ketchup ,chopped spring onions , some fresh ginger,a dash of soy and some brown sugar .
I remove the marinade and set aside then either fry or roast the ribs in a little oil .
I separate the onions and ginger and fry gently then add the marinade and cook .
I thicken with cornflour mixed in a little cold water.
I pour the sauce over the ribs before serving.
This is nice with plain boiled rice and salad .
My family always seemed to eat it with their fingers .
I do like it despite disliking coca cola and I'm not that keen on pork either.

Recently I remade this old recipe and I used a great dollop of ginger marmalade instead of fresh ginger and brown sugar .
I sharpened the taste with a squeeze of lemon .
Lime would do too .
This was a huge success with friends .
Serving a dipping sauce in small bowls is even nicer than covering the ribs with sauce .

Very simple, cream cheese melted and Worcester sauce added. Lovely with steak. Poor man's Steak Diane.

Condensed tomato soup!
Put stewing steak in pan or pot add tin of condensed tomato soup, some wholegrain mustard and half a can of water and cook slowly.
Never tried it with other meats but it tenderness beautifully.

For a quick stir fry sauce or marinade - nice with salmon or chicken.
2 tablespoons sweet chilli sauce
2 tablespoons soy sauce
1 teaspoon honey
Half a teaspoon ground ginger.

My go to is reduced wine, cream and crumbled Stilton. Great over steak, pork or chicken. Even better if there is a pan to deglaze.

Roast a mix of veg - sliced peppers, red onions, courgettes, green beans etc with seasoning and olive oil for about 20 mins the add some cherry tomatoes and sit a Boursin garlic and herbs cheese in the middle, roast about 15 mins more then stir all together with cooked pasta and a bit of pasta water to loosen. I do mine in an enamel tin and pop it on a very low light when I stir everything together usually with rigatoni.

As I forgot to add the thyme here is the exact recipe although I usually go by my own instinct:
CREAMY APPLE SAUCE FOR PORK

This should cover around 1lb of Pork trimmed of excess fat.

1 tbsp of sunflower oil
salt & freshly ground pepper

FOR THE APPLE SAUCE
1 knob of butter
1 onion finely chopped
2 eating apples with cord removed and chopped
2fl oz of Calvados (which I used) or brandy
7fl oz of chicken stock
7 fl oz of full fat crème fraiche
1/4 teaspoon of sugar
1 tosp of chopped thyme leaves
Plus extra to garnish

When making grilled salmon (usually once a week) I simply juice an orange, add some grainy mustard and sprinkle on the salmon and the salad with it. Very quick and tasty!
