It’s been a while so I will start us off…….whats for supper and why?

This evening it’s chicken risotto as I needed to use up some leeks and yesterday’s roast chicken.

It’s happily cooking in the Thermomix whilst I waste time on SM!

Risotto is my go to comfort food, I just love it and I always have ingredients to cobble one together.

I so envy those people who are able to eat puddings. It always completes the meal properly I think.

Yesterday's supper was the very last meat from the previous day's roast chicken, with the last halves of a courgette and a red pepper, all chopped up and supplemented with an onion, a tin of cannelloni beans and a tin of tomatoes, all thrown into the soupmaker and cooked on the "chunky" setting for 28 minutes. Eaten with home-made bread generously buttered, and all excellent. It is unrepeatable, of course, as I will never have the same selection of leftovers and tins.

I’m much the same, Elegran -I was recently asked by a guest for the recipe of a soup I’d made for lunch - not the first time this had happened.
I gave him the basics*, as far as possible, but did add that I don't have a recipe - it’s different every time, according to what I’ve got.
Plus my *secret ingredient, which on that occasion was some leftover cheese sauce. TBH I often make a little bit too much on purpose, since it goes so well in a vegetable soup.

This evening my supper is fresh salmon with a little butter and lemon juice in a foil parcel. Baked in the air fryer. New potatoes and carrots also airfried in a little olive oil.
Sweetheart cabbage cooked on the hob in a little water and English mustard.

Our dinner was due to an offer in Lidl’s xxx range this week of 4 salmon pieces for the same price as 2 in Sainsburys, Booths, Tesco etc.
I didn’t want to freeze any so I cooked all 4 at once and we used 2 hot with leeks, peas and baby potatoes and today’s lunch is salmon mayonnaise with salad on stotties.

Wheatabix Bran
Mushroom omelet
Halibut with stir fry veg.

Other people’s meal always sound much tastier. It’s like queueing in a supermarket and watching the persons shop in front - always much more exciting.

Today is. Asian salmon parcels with ginger, soy, broccoli, courgette and mange tout. ….possibly a little rice

Curried Lentil Soup, bread, salad, fruit.

Quite easy, done in less than an hour.

coconut oil, onion, garlic, ginger, curry powder, red lentils, salt, pepper, tinned tomatoes, coconut milk, coriander, lime juice

Tonight, a monster shepherd’s pie* which I’ll be taking the 60 miles to DD’s - it’s a favourite of the Gdcs, as well as of dh. With cauliflower and broccoli, plus on the way I will stop at Asda for an apple pie and some sliced mango, that last especially for the Gdcs.

*should really be ‘cottage’ since it’s minced beef, plus red lentils and assorted finely chopped veg, plus a tin of baked beans (most of the sauce drained off) added at the end.

DH and I are both busy this evening so we will go the the pub (we want to try their poutine) or the marina for lunch and a sandwich of some sort this evening.

Grated cheese and egg salad

Halibut and stir fry veggies - should have had it yesterday, but overdid it in the garden and got too tired.

Had roasted veg lasagne instead a La Bingham.

Last night was a vegetable bake, the first time I had tried the recipe. It was good but needs 'tweaking.'

For a start it would have easily have fed 4 people. We will have it again tonight, maybe with some tomatoes.

A prawn risotto tonight. Very small prawns at a small price from Asda - I always keep some in for stir fries, egg fried rice, and for adding to a fish pie.

Last evening was dhal for me and chilli for him.

We are away on holiday today so I rescued two mystery packages from the freezer!

I now don’t have to think about food for a week.

Last night we had a margarita pizza with extra mushrooms and cheese with a side of mixed pickles. I'd been out all day helping DD and SinL with painting at their new house so I was quite tired.
Tonight we are having leftover cold roast beef with a salad, coleslaw etc. I'm planning on making a pudding of some sort but have yet to decide, perhaps a rice pudding. We haven't had one for ages.
