Not Christmas Pudding

Ideas & recipes, please, for a dessert for Boxing Day.
Not Christmas pudding.
Needs to be quick & easy.
For 6 people.
I’m lacking ideas & inspiration.

Eaton mess…sort of…heat up strawberries with some sugar till they soften , let cool down. Crumble and layer meringues into tall glasses with spoonfuls of the fruit, with berry coulis and add some shortbread crumbs on the top…quick, easy, tasty

Mary Berry recipe for ginger traybake, which can be then cut into squares and iced;
Or just buy mince pies, warm them , and serve with icecream!

Chocolate chip cookie log.
Dip chocolate chip cookies in sherry, and sandwich together with sweetened whipped cream. Cover in more whipped cream and crumble a chocolate flake over the top. Refrigerate overnight.

I’ve mentioned my Black Forest trifle before.
Chocolate sponge/cake base.
Soak with gently heated cherry compote and alcohol. I use amaretto or sherry. Top with defrosted cherries.
I don’t like custard, so I use jelly fluff for next layer. Use a red jelly.
Top with whipped cream and sprinkle with crushed chocolate flake or grated chocolate.

Chocolate mousse is super easy, melt chocolate, fold in whipped cream, chill for 30 mins. Can do in individual glasses for a nice presentation. Quick, light, and indulgent

We are having a fruit Charlotte..ish.
Line a soufflé dish with sponge fingers and fill with alternate layers of fruit, meringue and cream.
Though I do have an ancient Tupperware Charlotte mould. I might make it in that.

Try a south african peppermint crisp pudding, can use a cream substitute, and marie or butter biscuits with a sprinkling of coconut instead of tennis biscuits. Make it the day before. www.foodandhome.co.za/recipes/peppermint-crisp-fridge-tart

Baked Alaska. Shop bought sponge flan case, block of your favourite ice cream and meringue.

Sticky toffee pud, buy it from a supermarket, Lidl do a good one, a few mins in the microwave and then serve with custard, cream or ice cream. A lovely change from Xmas pud and mince pies.

Favorites here:
Black Forest trifle (with a can of black cherries.)
Panettone bread and butter pudding.
Mincemeat tart with frangipane topping.
Poached pears (I prefer them with white wine, but red gives a lovely colour) with whipped cream.
Pavlova, with anything you like on top!

Eton mess is my go to easy dessert. Also a lemon merengue and whipped cream pudding which is frozen and can be served with a raspberry couli . I think it’s a Mary Berry dessert.

I keep a Cook's pudding in the freezer, chocolate torte or a mango cheesecake. I'm serving the chocolate torte decorated with mandarin slices at Christmas and the mango cheesecake with fresh mango for New year. Totally delish!

I warm some mincemeat and use it to make a Christmas version of Eton Mess. Meringue, mincemeat and whipped cream in individual glasses. Takes no time at all.

Just remembered - I used to do a Black Forest Gateau. Buy a chocolate cake and pipe double cream round the top. Tip a tin of black cherry pie filling into the middle. Top with a few chocolate curls. Done.
