It might have been mentioned on here before - not trawling through 6 pages smile but I am excited tonight about surprising my daughter who is sticking to this way of eating - with "cauliflower rice". It looks so easy to make! And very quick too.

My shopping trolley now contains four cauliflowers instead of a bag of potatoes. grin

I'm going to grow spaghetti squash this year because you bake them then scoop out the spaghetti like innards and serve with bolognese sauce.

OH has taken over the accompaniment to the monkfish and is doing something with dark green cabbage, bacon and garlic. On verra as they say round here (aka we shall see).
I am cooking between watching the French programme 4 weddings and a honeymoon, where they all slag off each other's wedding. Riveting!

I can report that the cauliflower rice was a big hit with all the family smile - husband thought it was couscous at first. I served it with sliced chicken crown with stuffing, roasted on a bed of casserole veg, and green beans.

The rice was dead easy - blitzed in the processor, raw - and then 7 minutes in the microwave. No water added. Next time I'll use the stir it in a pan with a knob of butter method...

Last week DH made the Hairys version of Chicken Jalfrezi (just left out sugar and thickening) can't wait to have it again, so planned for Friday night. That cauliflower rice sounds the perfect accompaniment GK

Tonight the GS stay over so it's Pizza Quiche with various toppings. The base is not pastry. Will report back if successful.

Made the sugar and flour free cake yesterday. Don't bother! It looked great and tasted horrible. Will put it out for the birds if it ever stops raining. Big disappointment sad

The cabbage dish was lovely and didn't overwhelm the monkfish at all.

Thanks Anya! Just had the broccoli, egg, cheese thingy for lunch and it was delicious. smile Should work with asparagus in season?
Tonight is bottom of the freezer cuisine. OH bought some moose from Lidl in a fit of enthusiasm so we are having Kashmiri Red Moose Stew (sorry Madhur) with bottom of the veg drawer, cauliflower, aubergine and red pepper with lots of spices.
I did think of Moosaka but well, you know.....

Glad you enjoyed the broccoli muffins. Would work well with asparagus and wilted spinach (squeazed)

We're having curry too, but much more prosaic - only chicken.

We're having fish twice today but only because we're going away for a couple of days on Monday so I need to have a 'use up' in the fridge.

Avocado and prawn salad for lunch.

Tonight will be baked lemon sole covered with chopped capers, parsley and thyme.

The remains of Little Gem lettuce, wilted in white wine with chopped black olives and braised sliced leeks in a creamy cheese sauce.

I'm going to weigh myself on Sunday (first time for three weeks) because I know we'll be breaking the diet when we're away as it's all paid for so we WILL have pud!

I will then have a weigh in every Sunday and fingers crossed won't have put any back on.

If I have it will just mean going back to stage 1 and walking the legs off the dogs!!

Well the moose was excellent. It was a steak and could also have taken cooking like a steak, but it worked very well in the curry. For the veg dish, I did a low-carb take on Madhur's cauliflower and potato, replacing the potato with aubergine and red pepper.

That's what we had for lunch yesterday too Merlot

Glad the moose was tasty Mamie we had curry too with cauliflower rice, just zapped in the microwave as Grannyknot suggested. So simple, that's going to become a favourite I can tell.

So far these last week we have eaten cauliflower, lettuce, tomatoes, cucumber, spring onion, yellow and red onions, all sorts of peppers, mushrooms, celery, olives, capers, green beans, carrots, cabbage, kale and rocket, raspberries and blueberries and one banana.

I think this is the low carb, high fibre diet.

Just made a Simnel Cake for tomorrow when we have guests. It's a low carb meal but they'll never notice that. Just hope I can resist the cake shock and just stick to cheese sans biscuits instead.

We had steak with blue cheese and creme fraiche sauce tonight. Steamed cavolo nero, cauliflower and green beans.

I had a carb craving at about 3pm this afternoon and would have killed for a slice of Lemon Drizzle with my brew

Good job there's nothing like that in the house.

It is such a good diet in terms of fruit and veg, isn't it?
Tonight we had beautiful fresh sole from the market with tartare, salad and three oven-baked chips each.

Dead simple, Anya. I popped the steaks in a low oven to keep warm, reduced the creme fraiche in the frying pan with the steak juices and crumbled in some blue cheese at the same time.

All the recipes are really simple and like you say, full of fresh veg.

We're not eating much fruit at the moment but I will buy some berries next time I'm in the supermarket.

We had smoked cod (small portions) on top of spinach, topped with a poached egg. Asparagus and broccolini, and a drizzle of hollandaise sauce. Very filling, and lovely.

There are some delicious recipes and ideas on this website, loopylou. Don't be put off by the Atkins name because you can adapt everything to suit your diet.

I'd recommend Hairy a Bikers How to Love Food and Lose Weight.

Try their:
Spanish Style Chicken Bake (just leave out potatoes)
Roasted Cod with Parma Ham and Peopers (only 10g breadcrumbs)
Mushroom, Feta and Tomato Baked Peppers (50g breadcrumbs)
Minted Pea and Feta Omlette
Whole Baked Fish with Sundried Tomatoes
Lemony Lamb Kebabs
Peppered Steak with Mushroom
Old Fashioned Chicken Stew
Rich Beef and Ale Casserole
Chicken Jalfrezi

And so on. Substitute mash or rice with cauliflower mash or cauliflower rice.
