A new low-carb support thread for 2016

Thought we needed a shiny new thread for the New Year.
The thread is intended to support people who are already on the diet or want to start losing weight / gaining health benefits by low-carbing.
Here is a simple explanation of this way of eating and how it works.

You do not have to count calories, weigh anything, exercise furiously or feel hungry.
You do have to cut out sugar and sugar-substitutes and avoid starchy foods like potatoes, bread, rice and pasta.
You need to eat lots of vegetables (especially those grown above ground) and protein which can be cheese, eggs, meat, fish etc. You can eat olive oil, butter and other natural fats. You can eat limited amounts of fruit, dark chocolate and some alcoholic drinks in moderation.
You need to avoid anything labelled low-fat and most processed food and drink.

I think it will certainly keep a couple of days. You could just do one portion though? You just need to be careful melting the chocolate and then not letting it re-set before you put the egg in, but I had everything ready and to hand and it worked fine.
We had a lemon tree when we were in Spain in January and it was wonderful - don't think it would work in Normandy though!

Mamie, I love chocolate mousse (or mouse, whatever), but can't get it here in Cyprus, so will be trying your recipe, how long does it keep as DH is not really into chocolate, and I would feel awful grin if I had to eat two portions all by myself.

Thanks Pippa, that looks delicious. Not sure if I reported back that the chocolate mouse of melted chocolate and eggs worked really well. It was 30g of very dark chocolate and one egg each. Melt chocolate in bowl over simmering water (not touching) take off heat, stir egg yolks and add them, then add whipped egg whites. Put in fridge for a few hours.

Hi Lazigirl, Cheese cake recipe to follow -
Make a base with Brazil nuts and almonds whizzed up to make a 'flour' like base enough to cover the bottom of a loose bottomed baking tin (mine was 6 inches as this was an experiment) add enough butter to make it all stick together.

Then mix full fat 200 gm cream cheese, three medium eggs, 100 ml ( approx) cream, a teaspoon of vanilla paste , grated lemon peel to taste, our lemons here are just off the tree and the size of a jaffa orange, so I used just one.

You will need to increase the amounts of ingredients if you use a bigger baking tin
Cook at 180 degrees for about 40 minutes, until it is set. I do leave it in the oven while it cools just to make sure, but my oven can be temperamental, rather like DH wink
The top should have been covered in sliced strawberries but I had eaten them.

The original recipe is 500g of rice for 6 people - how can anyone eat that much? We have rice about once a month in a kedgeree and that is 50g between us.

Keep at it Lazigirl. They do say it is much easier for men to lose weight than women.
Are you drinking enough water. 3 litres a day is recommended.? I find I lose weight more easily if I do just a half hour to an hour of exercise a day. Good luck and don't get despondent.sunshine

Anyone seen the recipe for Persian Chicken on the front of this months Sainsbury's magazine? Well I've just tried it and replaced the rice element with raw cauliflower rice ( which is then cooked inside the recipe)

It was Absolutely Delicious and so filling ... a must try treat grin

This thread has been a great support and menu inspiration whilst I struggle with the 8 week diet, especially difficult over Easter entertaining family, out with friends etc. And I don't want to become a diet bore. I have kept to carb less main meals as far as possible and a bit despondent as only lost about 6lbs in about 5 weeks. My main concern is not weight loss but that my pre diabetes does not progress to Type II. My DH has lost more weight and he isn't trying! Main weakness is beer at weekends, which is a treat and I know it's loaded with sugar but finding difficult to give up. Help. Could you share your cheesecake recipe Pippa000 please?

Shysal, glad you like the cheesy buns. I did a cooked cheese cake yesterday, with a ground mixed nut and almond flour base, very successful, nice to have a sweet again after a meal. Now I just need to perfect crisp bread. smile

Just got the veg tagine going smelling good but I haven't bothered to drag the Tagine out as it doesn't take long to cook. Having it lunch time as visiting offspring today. Going away for the rest if Easter with new diet firmly in mind

Tried your cheesy bun recipe from this thread today, Pippa000. They are the nicest thing I have tried with almond flour. I shall have to freeze them quickly before I eat the lot! Thank you very much.

I have noticed a lot of my recipes use xanthan gum to give a more bread-like texture, does anyone use it, and does it make a difference?

I suppose if we lose weight it will be a bonus but really we are doing it for entirely health reasons. Perversely I have spent the entire last 10 years trying to lose weight with zero success, and it would be brilliant if I lost weight at the same time.

Ingredients for tagine - red onion,cauliflower,butternut, tomatoes, aubergine,chickpeas, preserved lemon, spices, harissa, root ginger, garlic. Shall try the curry.

This is a good thread.

Lunch is going to be smoked mackerel salad.

Sounds excellent! The curry was delicious. I do miss naan a bit, but worth it to fit into a size 10.
