Low-carb support thread 2016 Part 2

The thread is intended to support people who are already on the diet or want to start losing weight / gaining health benefits by low-carbing.
Here is a simple explanation of this way of eating and how it works.

You do not have to count calories, weigh anything, exercise furiously or feel hungry.
You do have to cut out sugar and sugar-substitutes and avoid starchy foods like potatoes, bread, rice and pasta.
You need to eat lots of vegetables (especially those grown above ground) and protein which can be cheese, eggs, meat, fish etc. You can eat olive oil, butter and other natural fats. You can eat limited amounts of fruit, dark chocolate and some alcoholic drinks in moderation.
You need to avoid anything labelled low-fat and most processed food and drink.

Candlefran I think that someone who holds degrees in medicine and surgery and is a Fellow of the Australian College of Surgeons is more than capable of reading research papers on nutrition and evaluating the evidence for and against the LCHF diet.

Anya is spot on with her comment about vested interests.

We think we have found a house within spitting distance of the sea, so fingers crossed.
Off to Swansea market in the week for later bread. That should be good with some bacon.DD continues to loose weight and looked really beautiful in a new dress last week.

Have been experimenting with low-carb "lasagne". Last week we had a bolognese sauce, mozzarella and parmesan for the cheese layer and leeks to replace the pasta. That was good and we added a couple of baked eggs to the leftovers for lunch the next day. Tonight I am doing smoked haddock, mushrooms, spinach and a creamy-cheesey, mustardy bechamel substitute.

Hairy Dieters do a lasagne with leeks, though I have' t tried it yet. DD continues to lose weight on the LCHF and we are all doing well except SiL who insists on chips?

I have discovered the 'joy' of gelatin, and now regularly make cheeses cakes with a finely crushed almond and walnut base adding berries for flavour. Although this week I did add some spiced plumbs, tasted like Christmas.cupcake

The brownies recipe that BB found on this site is delicious. Ground almonds, dark chocolate, dates and pears. So light as well.

We have given up on the ipadMamie and the lap top is much better. So we are standing taller. Can't wait to move into the new house. Probably in the new year

Yes I have Anya but then I just make moussaka anyway. I think the critical bit is replacing the béchamel with the right consistency (especially as I can't get double cream). The haddock one was good, but a bit too much liquid. I had pre-cooked the mushrooms and spinach, but obviously there was still too much liquid left.

I'm new to this group. Have been lurking for a few weeks. ? I was inspired by some of the personal stories on here so I thought I would try the LCHF diet for a month.
I must say I'm really pleased. After 5 weeks of being on the diet, I have lost half a stone. I didn't stick to it rigidly so I am very impressed with the result. I'm going to give it a good try up to Christmas and see what I can achieve.

Welcome fiorentina51 and glad this way of eating is working for you. Most of us have been on LCHF for a while so we don't post as often these days, but we are always happy to help.
BB I do the avocado and salmon a lot and on Sunday we had baby shrimps in mayo and tomato puree instead.
We are on our own for Christmas this year so I was thinking of creating an ice-cream for pudding. I thought I might soak dried fruit in port and then make ice-cream with egg and cream. What do you think? We have already bought the goose as the man in the market said it was cheaper to buy it early and freeze it.

Welcome * Florentina51* and please don't be offended if I call you flo in future. Glad to hear you're enjoying the low carb way of eating. I don't stick to it rigidly either inasmuch as I like carrots, parsnip, peas, tomatoes, etc. but I do avoid all extrinsic sugars, bread, potato, rice, pasta, etc. and that seems to work for me (or rather DH because I'm following it on his behalf).

Yes I agree Anya. We also have a huge Jerusalem artichoke crop to get through. On Sunday we had roast partridge with roast artichokes and sprouts. Delicious but somewhat of an aftermath...
