Low-carb support thread 2016 Part 2

The thread is intended to support people who are already on the diet or want to start losing weight / gaining health benefits by low-carbing.
Here is a simple explanation of this way of eating and how it works.

You do not have to count calories, weigh anything, exercise furiously or feel hungry.
You do have to cut out sugar and sugar-substitutes and avoid starchy foods like potatoes, bread, rice and pasta.
You need to eat lots of vegetables (especially those grown above ground) and protein which can be cheese, eggs, meat, fish etc. You can eat olive oil, butter and other natural fats. You can eat limited amounts of fruit, dark chocolate and some alcoholic drinks in moderation.
You need to avoid anything labelled low-fat and most processed food and drink.

I am sorry not to have answered have been as my grandma would put it 'proper poorly', GP has prescribed very plain diet for a week until tummy recovers and he has referred me to the hospital next week for further advice. So many thanks for all advice and will wait and see what comes next!

Well my run up to Christmas went well and I even managed to lose 2lb over the festive period. Unfortunately, just after Christmas I came down with the cough and cold that has infected most of the population and spent a month sucking on sugar laden throat sweets and generally overdoing the comfort eating. I didn't gain any weight but I didn't lose any either. ?
Back on the waggon now and have lost another 2lb. ?
A big thank you to those of you who have posted recipe ideas. They have been very useful....and delicious.

Glad you are feeling better fio.
A photo of us popped up on my Facebook page of us four years ago and I was really shocked to see how fat we were. So glad we found this way of eating.
We had monkfish last night, cooked in coconut milk and spice paste (garlic, ginger, onion, turmeric, cumin, coriander etc) and also experimented with a new cauliflower recipe, lightly steaming and then baking in the oven in a spicy yoghurt mix. I saw something about fresh turmeric on here and have been using it ever since,
Anyone got any good cabbage recipes? The organic supermarket had some lovely looking savoy cabbages this week.

Morning all. I am more of a lurker on this thread having heaved a pre diabetic state in oblivion using the LCHF diet. Am in here this morning to offer words of caution. Yesterday I ate ONE slice of ordinary white bread and have been so ill for 24 hours. So it is back to the sourdough spelt bread made by OH.

While I am here, Mamie we make dolmades with the cabbage we grow on our allotment. You can do a whole batch and freeze in a dish ready for use later. Make sure you blanch the leaves first to soften them.

What do you put in your dolmades Izabella? We are having roast chicken tonight so will do the cabbage with lemon and butter to go with it.
Interesting about the bread. We always use spelt flour now. We don't have very much, but I do much prefer the taste.

Mamie I've made sauerkraut in the past. It's easy and because it forments it's reputedly good for gut bacteria. I also slice it thinly and just fry it. You can add onions and bacon when frying if you like.

I had thought of sauerkraut but we can buy that fairly easily here. Think I might make a hearty soup with the rest. ?

Cauliflower rice, onions red peppers and any left over chicken, all finely shredded should go well. With or without grated cheese over the completed dish. Enjoy.

We have some rather nice smoked sausages in the fridge....
We had roast Jerusalem artichokes and roast squash with the roast chicken and lemon cabbage. I just don't miss potatoes at all these days.

Made a delicious hearty soup for last night with cabbage, smoked sausages, squash, onion, garlic and carrot. To spice it up I used hot and mild spanish pepper and ham stock. Lunch today was mushroom and leftover bits of blue cheese in an omelette and tonight OH is doing monkfish in parma ham with broccoli and broad beans plus a bit of chorizo.
It is wet, miserable and muddy in Normandy.

I microwave shredded cabbage, topped with a large knob of butter and rashers of streaky bacon, until bacon crisp. A sheet of kitchen paper laid loosely on top prevents spitting.

Thanks for keeping ideas rolling in Mamie. Your meals always sound delicious. Must say shysal never thought of microwaving cabbage - with bacon too, sounds quick and easy. Wet and gloomy in Shropshire but off to Barcelona at weekend so hopefully a bit less gloomy.

Have just been trawling through the freezer looking for inspiration for dinner. So it's Korean Fish Stir Fry with noodles for OH and cauliflower rice with it for me. I had to sprottle around outside to pick the spring onions and grasped a ** nettle the first attempt.

Yoghurt for afters.

Just fitting in few days away before husband reaches the top of hip op waiting list. The spin off from my low carbing is that he's been eating same meals and although not overweight has lost over half a stone, which is all good for surgery.

Izabella Ow! ? Dinner was delicious but needed a bit more sauce. Probably just a sploosh of wine to clean the pan juices would be enough.
