Low-carb support thread 2016 Part 2

The thread is intended to support people who are already on the diet or want to start losing weight / gaining health benefits by low-carbing.
Here is a simple explanation of this way of eating and how it works.

You do not have to count calories, weigh anything, exercise furiously or feel hungry.
You do have to cut out sugar and sugar-substitutes and avoid starchy foods like potatoes, bread, rice and pasta.
You need to eat lots of vegetables (especially those grown above ground) and protein which can be cheese, eggs, meat, fish etc. You can eat olive oil, butter and other natural fats. You can eat limited amounts of fruit, dark chocolate and some alcoholic drinks in moderation.
You need to avoid anything labelled low-fat and most processed food and drink.

I feel fine today so must have been just a blip.
I would like to start tough & then ease up rather than the other way round I think. Plus if DH's blood sugar shows a marked difference it will keep him keen.

Glad you are feeling better. An old favourite here tonight - salmon with spinach and crème fraîche plus cauliflower gratin.

MMmmm- I'd enjoy that. I wish my DH ate Salmon, spinach & cauliflower!
He is very hard to feed on this diet as he doesn't really eat vegetables! He is going to have to learn I think. I am doing Harissa Chicken with as many veg in salad as I can get him to try- tomatoes, spring onions & celery.His plate looks very small compared to mine with all the greenery.
The DGC are having Shepherd's Pie which I was longing to taste when I was making it

I make shepherd's pie with cauliflower mash. It is delicious (plenty of butter and parmesan).
I think he will need to eat vegetables as they really are needed to replace the carbs. Very hard without. ????

Last night I tried broccoli rice including the stalk, I had only done it with cauli before. I blitzed in a food processor, microwaved it for a couple of minutes then finished in the oven with a few of my usual bits of leek softened in butter, bacon and cheese. It had a lovely nutty taste and texture. I notice that Asda sells ready riced broccoli as well as cauli, which gave me the push to try with the stalk I had. Only £1 for a big bag, so I might cheat sometimes, and it could work out cheaper that from scratch.

I'm having a roast potato tonight (don't tell Mamie) because the family coming for tea and it's roast lamb. So I'm treating myself to one roastie - so there!! grin

Thing is, I'll really enjoy it as it's a rare treat.

I bought the Tom Kerridge 'Dopomine Diet' last week so we are having cod with chilli and ginger this evening. Hope it goes well as SiL is very unadventurous with food.

Try the Pulled Chicken and Shiitake Mushroom Broth BB (p42)

Yes, it has honey in it, but I just used 1 tablespoon, and I also used left over chicken from the weekend rather than cook it from scratch and a chicken stock cube. And I didn't have any lemongrass or lime leaves or sherry vinegar, but even so it was very tasty and very filling, with unusual flavours and a novel way to use up leftovers.

I think you may cook like me Anya I havn't got that or that so I'll try that and that instead. Usually works alright. But then DH etc won't know how it is supposed to taste anyway.?

I have a lovely recipe for fish curry, using fish (obviously!), red Thai curry paste, coconut milk, and other bits and bobs. A colleague came to tea and loved it so much she asked for the recipe.

I bumped into her a month or so later and she told me she'd served my recipe to friends, who also loved it.....but she used green Thai curry paste and chicken!!

My recipe?. Really grin

I have been browsing the www.ditchthecarbs.com/ site this morning for nibbles for GCs that I could eat too. I made the FatHead crackers which are delicious. There are other FatHead recipes which look good too. I thoroughly recommend them for the occasional treat.

Mamie, I buy my fine almond flour on Ebay. Not cheap but I only use it rarely. They do post to Europe.

My favourite fumanchu are Pear and Chocolate Brownies. The recipe can be found on the food link on the top green banner. Look for low carb blood sugar recipes. They are very Moorish. Enjoy

Tonight we are having fresh mackerel stuffed with spices, cauliflower with ginger, cumin and coriander and yoghurt with cucumber. OH is busy pounding the spice mix in the kitchen. ?

DH is having bad withdrawal symptoms & needs toast!! Is there a carb free bread recipe that will toast?
I can't eat coconut & all of the recipes I have found use coconut flour.

I've just weighed in & have lost 7lbs in first week. I am not expecting that level of weight loss every week but it is an encouraging start.

Well done Craftycat that is brilliant. I am not sure there is a toast substitute really. Once we had lost the weight we started having a small slice of spelt toast each and that is lovely (OH bakes, slices and freezes a couple of loaves every few weeks).

I have my craft group coming for lunch this week & friends for dinner on Saturday. I have decided that it is just mad to try & feed them this way so I will just cook normally on those days & get back to it the next day. It's not as if it happens often & I am not doing it for blood sugar myself.
I love baking & I do miss it but I can still bake for GC when they stay - which is a lot!
