Low-carb support thread 2016 Part 2

The thread is intended to support people who are already on the diet or want to start losing weight / gaining health benefits by low-carbing.
Here is a simple explanation of this way of eating and how it works.

You do not have to count calories, weigh anything, exercise furiously or feel hungry.
You do have to cut out sugar and sugar-substitutes and avoid starchy foods like potatoes, bread, rice and pasta.
You need to eat lots of vegetables (especially those grown above ground) and protein which can be cheese, eggs, meat, fish etc. You can eat olive oil, butter and other natural fats. You can eat limited amounts of fruit, dark chocolate and some alcoholic drinks in moderation.
You need to avoid anything labelled low-fat and most processed food and drink.

I make san marzano lasagna, with cheeses, on top of the thin round slices of portabella. It seems you could make the bechamel as usual, the flour is minimal. Or make a layer of ricotta mixed with eggs, parm and herbs. Some use thin slices of courgettes as noodles.

Thanks, I have tried some of the cheese combinations, mixed with cream. Have also used leeks to replace the pasta. Have sometimes used a normal béchamel but obviously no good for strict low carb.

Mamie this is more than you asked, but for clarification. Bottom layer, (1) lay on buttered crockery, 1/2" thick slices of portabella, (2) 2 cups ricotta mixed with 3 eggs and 1 cup parm (that amount is for the whole of it), (3) mozarella to cover, (4) San Marzano, sausage, herb sauce to cover. Repeat two more times. Bake an hour, 190C.

That sounds nice, Norah. OH has just told me that we don't get Portobello mushrooms here though! I am sure we could find a substitute. ?

Thin slices of courgette are lovely. About the bechamel, I'm not sure a very small amount of flour in a big crockery (for many servings) is that important, that would define low carbs in my opinion.

I love the inventive low carb recipes and the support offered by Mamie and other regulars on here, but admit I dont follow low carb diet slavishly. I have lost 1st 3lbs slowly over almost a year and my blood sugar and BP have correspondingly come down. I am hopefully out of the pre diabetic zone now, and do very occasionally have some bread, potatoes, pasta or rice, plus the odd beer. I feel that if I follow the diet too strictly I will be more inclined to give up, and this regime suits me. If I was diabetic or put on weight I would definitely be stricter, but am very mindful of my weight nowadays. My main meals used to be based around carbs but not any longer and eating far fewer carbs has become a way of life for me (and DH) now.

Well I always say food in France is very unadventurous, but on the lunchtime news today they were talking about a regional dish of lambs' testicles with turnips and tonight on my favourite 4 weddings programme they had caterpillars for the starter. ?
We are having monkfish and tamarind curry, which is positively ordinary by comparison. ?

I thought France was the foodie capital Mamie. How yummy, lambs testicles and caterpillars. Now you know what to do with them when they start eating your cabbages. (Caterpillars that is).

France thinks it is the foodie capital Lazigirl but in my experience every region has about four recipes that they repeat ad nauseam. There is this very curious lunchtime programme that has a ten day weather forecast and endless items about regional and seasonal food. We had a whole week on foie gras at Christmas.

We had another Tom Kerridge recipe last night. Ganmmon and cabbage with Apple and Frankfurters. It was wonderful and all cooked in one pot. Even SiL liked it and he is a pizza and chips man
We have just been given a completion date for our house . We are really looking forward to getting back to proper eating and lots of walks. It has been a bit of a struggle at times with DD. But she is continuing to lose weight and looks so much better.

Lazigirl if you are slowly but surely losing weight then carry on doing what suits you. Low carb, doesn't mean no carbs, and the weight loss is the guide.

Hello Mamie et al. I'm new to GN and would like to come aboard please. My dietary downfall has been carbs and also because I fall off the wagon because I don't seek out support and consequently lose motivation. BMI just in the normal range but waist -hip ratio bad news with fat belly. Aiming to lose 10% of total weight for health and vanity reasons!
I moved from the UK to be near family and live in British Columbia, Canada. The Province ranges from the Pacific Coast to the more arid Okanagan Valley has a wonderful range of fresh produce, lovely varieties of chard and kale right now for example which is great.
I need to cut right down on the carbs and eat more dairy. Started with a 2 egg omelette ( with spinach, mushrooms, tomatoes, herbs) for lunch today.So here goes....

Welcome Bluebell123 from a grey but not too bad West Wales. Moving into a new house this Friday with a large garden and green house. First job will be to plant broad beans. I have lost 3 stone on this diet and am keeping it off, so good luck. No hardship at all really. ?

One of our favourite veggie, LC meals. Really simple. Just chop up bite-sized bites of onion, mushrooms, red and green peppers, tomatoes and a couple of crushed garlic.

When softened make a couple of wells and drop in a couple of eggs.

Top with favourite grated cheese (I love vintage Gouda)

If you don't have a tagine a frying pan would do the job.

Well we are in. The garden needs a bit of sorting but there is an enormous strawberry patch, fruit trees and some raised beds. So we should be alright for fruit and veg. Furniture comes on Tuesday, so a bit of cleaning needs to be done beforehand. Lovely big range in the kitchen. Can't wait go get started on the cooking. Bit tired now so an early night.
