GrannyIsland be careful about keeping calories low because you need the high-fat food to make the regime work. It seems counter-intuitive, I know, but you need to eat olive oil and things like full-fat yoghurt, cream, butter and cheese in moderation. The theory (as I understand it) is that if you eat fat and carbs the body burns the carbs and leaves the fat. If there are few carbs to burn then it burns the fat slowly and you don't feel hungry.
It isn't a no carb diet because you eat vegetables especially those grown above ground. Fruit juice is a no-no and only small amount of fruit allowed; berries are best. Full-fat yoghurt, berries and seeds are a favourite breakfast and eggs are good.
My mayo recipe is the classic one. One egg yolk to 1/4 pint olive oil, drip at a time beating as you go, once you have a good liaison add teaspoon of vinegar or lemon juice and drip the second half in more quickly.

I have been low carbing for over 2years now, losing over a stone and half initially, which I have managed to maintain to within 3lbs or so. I don't find it difficult as it's mainly substituting high carb for other foods, and only eating such as bread and potatoes (chips) as treats when I eat out. It has been really worthwhile for me because I was told I was pre diabetic, which shocked me as I wasn't really overweight. Now I weigh 8st 6lb and out of diabetic zone. To anyone contemplating low carb I think it is very worthwhile and much easier than calorie counting. Nice to hear everyone's ideas for delicious recipes on here. Thanks Mamie & others.

I’ve just realised I put one of my previous posts on the wrong thread, so here goes again. Very chuffed at losing 2 pounds in my first week. It was a struggle. I am trying to keep within 1200 cals while lchf. My problem is that I feel really tired - I could sleep for Scotland! Seems my body is refusing to adjust. Anyone else feel the same?

I do still spiralize courgette, but quite often now I just bake the courgette in the oven and put the sauce on top. I think it retains flavour better.

Doodle replace potato with celeriac or cauliflower. celeriac makes lovely chips. Or mashed on a shepherd's pie. Similarly mashed cauliflower is lovely
Spiralized courgettes or pointy cabbage cut very thin is a great substitute for pasta.
Good luck. Just try not to eat bread though

Well how funny I should just come across this thread as am just thinking about a low carb diet. I have been wondering how I will cope or if I could manage. I am not very overweight but want to shed a few pounds and maintain a lower average weight.

I have a few problems which can make diets a bit hard to follow. Firstly I don't eat fish of any kind, very low salt (as in nothing much at all) and cannot eat piles of veg as it upsets my stomach. I have bought a bag of bulgar wheat today (not quite sure what I'm going to do with it yet)

I am used to eating fruit but some of the things I have read said that because of the sugar content you should not eat much.

I seldom eat bread but do have some potatoes and pasta.

Do you have any low carb food charts that you use or ideas for replacing potatoes and pasta? Any thoughts gratefully received ?

Had a varied day today:

Breakfast, smoked salmon & scrambled eggs
Lunch, M&S chicken & bacon layered salad
Dinner, fried whole mackerel & salad

No snacks but 2 large glasses of white wine with dinner smile

One hour's brisk walking

Oo that sounds nice.
I quite like making mayo, I find it soothing. I taught my eldest GD the other day and she said, "I am seriously never going to do that again". ?

Rib-eye steak and salad this evening, plus wine.

Welcome to regulars and newcomers! Let us know how you are getting on. I am now in my fifth year of low-carbing and my weight has been stable at 9 stone / size 12 for four years. I have never felt healthier.
We are enjoying the heatwave like everyone else so salade niçoise for dinner with a nice glass of dry rosé. Salade niçoise will be leaves, tomatoes, green beans, cucumber, red pepper, olives, tuna and hard-boiled eggs in an oil and vinegar dressing with home-made mayonnaise.
