Accidental soup

This is a delicious soup, loved by all those in my family even the ones who pull their noses up at celery in any other guise:

1 whole head of celery including leaves, wash and chop into 1cm pieces
Chopped onion
50 gr butter
1 tablespoon plain flour
Bay leaf, salt, pepper
Vegetable or chicken stock - 1 litre
50 ml single cream (optional).

Saute onion and chopped up celery in the butter till soft, add stock, cook till celery is soft. Add flour (sprinkled in) and cook bit longer (5 mins). Rescue bay leaf and discard before blending in saucepan with hand held 'plunge' blender. Or whizz in table top blender.

Serve with a swirl of cream on this gorgeous pale green soup. Or stir in the all of the single cream for a more indulgent soup.

The main ingredient for the one I made the other night cost all of £1.00 - the cost of the organic celery on special (didn't use cream). It's quick to make too.

Will try that one at the weekend grannyknot it was your mention of 'gorgeous pale green soup' that did it. My borsch was delicious but I'm off reds at the moment.

Choc ice and chips sound good to me.

I love celery soup. This one looks fab. I put a dash of apple juice in mine if there's any bitterness when I taste it after blending. Doesn't tend to need it at Christmas time when celery always tastes delicious - crunchy and juicy grin

I just made a large pan of celery soup, it's delicious.

when Cheek! grin My children didn't get chips with anything. They were a very occasional treat when they went to my mum's house!

What a good idea re the apple juice. smile
