I just made a large pan of celery soup, it's delicious.

when Cheek! grin My children didn't get chips with anything. They were a very occasional treat when they went to my mum's house!

I love celery soup. This one looks fab. I put a dash of apple juice in mine if there's any bitterness when I taste it after blending. Doesn't tend to need it at Christmas time when celery always tastes delicious - crunchy and juicy grin

Will try that one at the weekend grannyknot it was your mention of 'gorgeous pale green soup' that did it. My borsch was delicious but I'm off reds at the moment.

Choc ice and chips sound good to me.

This is a delicious soup, loved by all those in my family even the ones who pull their noses up at celery in any other guise:

1 whole head of celery including leaves, wash and chop into 1cm pieces
Chopped onion
50 gr butter
1 tablespoon plain flour
Bay leaf, salt, pepper
Vegetable or chicken stock - 1 litre
50 ml single cream (optional).

Saute onion and chopped up celery in the butter till soft, add stock, cook till celery is soft. Add flour (sprinkled in) and cook bit longer (5 mins). Rescue bay leaf and discard before blending in saucepan with hand held 'plunge' blender. Or whizz in table top blender.

Serve with a swirl of cream on this gorgeous pale green soup. Or stir in the all of the single cream for a more indulgent soup.

The main ingredient for the one I made the other night cost all of £1.00 - the cost of the organic celery on special (didn't use cream). It's quick to make too.

Ella are you the original mum who gave the children choc ice and chips for tea? grin

Adding tbsp bulgar wheat or couscous adds body /texture to any soup. There are packs of spicy/herby couscous in supermarkets.

anno you've been in my freezer! MrDog is away for a few days. I'm defrosting 'something' for my lunch tomorrow. No idea what it is yet grin

I find the pressure cooker invaluable for soup making. It's fast and keeps the flavour in. I also have a large stainless steel stockpot which is perfect when I have a lot of veg to contribute to a 'chuck it all in' kind of soup. Soup freezes well in small portions - handy for those of us who live alone. But I keep finding containers of unidentifiable stuff which may or may not be soup, so it's really a good idea to label them. blush

Nanadog Wed 14-Nov-12 22:11:15

Yes, cook it in a saucepan and then mash it about a bit with a potato masher or a whisk. Bon appetit.

I don`t have a blender, can I just do it in a saucepan?

Nanadog Wed 14-Nov-12 18:20:36

Вы правы jeni

Nanadog Wed 14-Nov-12 18:15:27

jeni Wed 14-Nov-12 16:36:53

Unless you want borsch.

Nanadog Wed 14-Nov-12 16:32:39

Tip number don't start with beetroot hmm

numberplease Wed 14-Nov-12 16:16:52

At my advanced age, believe it or not, I`ve never made soup! Always thought there was some mystery method attached to it that I never knew about, but you lot make it sound so easy, I`ll have to have a go, I think.

Nanadog Wed 14-Nov-12 14:18:01

It looks as if the St Valentine's Day Massacre has taken place in my kitchen. Hope the beetroot soup is tasty enough to make up for the mess! hmm

when yes good plan. All these recipes sound divine - I am having a soup making weekend I think!

kittylester Tue 06-Nov-12 18:43:48

I often cook butternut squash, peeled and chopped into biggish bits, with olive oil, maple syrup and ginger to have with a roast but usually put another one in the oven at the same time and make the left overs into soup with slow fried onions, garlic and stock. Blitz using a hand blender and top with grated gruyere!

I had a friend who used to be a professional cook and his recipe for tomato soup is absolutely delicious - and VERY easy. My kind of recipe!

Two tins of tomatoes (yes really)
A teaspoonful of very lazy garlic
2 teaspoonfuls of pesto
2 teaspoonfuls of marigold bouillon powder
Couple of tablespoons of tomato puree

Bung it all in a saucepan and heat up - add water if you want it a bit thinner.

Serve with grated strong cheddar cheese and bread.
