Favourite Comfort Food

Its below zero outside. Has been all day. I am just about to eat one of my favourite types of comfort food. Baked apple and custard. Hits the spot on an evening like this. Other items on my list would be home made pizza, toad in the hole and lasagne.
So, without any diet guilt or any nonsense of that kind... what are your favourite comfort foods?

After my Nightmare Shopping trip the other day, I made myself some pasta (the sort that needs only 5 minutes to cook) and had it just with plenty of grated cheese on top.
Lovely!

On a similar note, dd and 3 x Gdcs are coming for lunch tomorrow, so I’m going to make a macaroni pie - much like macaroni cheese, except that it has added eggs, in order to set firm.
The only faff is, having to grate a whole pound of good strong Cheddar! Otherwise v easy.

Homemade pea soup made with a ham shank, dried green peas, pearl barely, carrots, celery and onions. I would obviously need some crusty white bread to dunk. Failing that, egg and chips with bread and butter.

We usually have a couple in for those occasional evenings when I just really CBA to cook, or simply feel too tired to bother. One each, just with frozen peas. Perfect!

Lasagne, followed by mixed fruit crumble and custard.

Otherwise, steak and chips, onion gravy and veg, followed by mixed chopped fruit and double cream.

Our tea tonight is Cornish pasty, peas and thick gravy, followed by chocolate pudding and custard. Very comforting for me reminds me of being home with my mum and dad.

Gorgeous NYTimes Curry.

Tofu and Sweet Potato Peanut Butter Curry

1 tablespoon vegetable oil, 1 yellow onion finely diced, 4 garlic cloves finely chopped, 1 (1-inch) piece fresh ginger peeled and finely chopped, 1 tablespoon curry powder, ½ to 1 teaspoon crushed red pepper, 1 ½ pounds sweet potato peeled and cut into 1-inch chunks, 2-3 cup water, ½ cup smooth peanut butter stirred well, 1 (13-ounce) can coconut milk, 1 (14- to 16-ounce) package extra-firm tofu drained and cut into 1-inch pieces, 4 teaspoons soy sauce, Salt and pepper

Cooked rice, to serve

Heat a large Dutch oven or heavy pot on medium-high. Add the oil and onion and cook until softened, 2 minutes. Add the garlic, ginger, curry powder and crushed red pepper, and stir until fragrant, 1 minute.
Add the sweet potatoes and stock. Cover, reduce heat to medium-low and cook for 10 minutes.
Add the peanut butter and coconut milk and stir until the peanut butter is melted and well combined.
Increase heat to medium-high and add the tofu, peas and soy sauce, and cook until warmed through and the sauce is thick, 3 to 5 minutes. Taste and season with salt and pepper.
Serve over rice. Top with cilantro leaves and chopped peanuts, with lime wedges on the side.

Cheese on toast. Good strong farm cheddar and white bread made properly (flour, yeast and a littlel salt/fat, NOTHING ELSE) by an artisan baker (not sourdough)

At this time of the year I would say my go to comfort food is garlic bread and pepperoni pizza. Also home made toad-in-the-hole. The occasional egg and bacon butty goes down well too, but that's not something I have often.

None are particularly healthy but they're for pleasure on a cold winter's day.

I love an old fashioned hot pudding - treacle sponge, spotted dick, rice pudding, made with whole milk, butter and freshly grated nutmeg, apple pie or fruit crumble with custard, Trifle (no sherry) Egg custard, Bakewell tart etc etc the list is endless.
